
Sometimes I keep cookie dough in the refrigerator so I can bake one of these warm desserts in about five minutes. It’s the kind of treat that comforts me on a rough day or when I desperately need a chocolate fix.
You can use almost any cookie dough and any ice cream flavor, but as a chocoholic I prefer to go big on the chocolate. You could even add chocolate ice cream on top for extra decadence.

Ingredients
- ½ cup (113 g) butter
- ⅓ cup (68 g) granulated sugar
- ⅓ cup (68 g) light brown sugar, gently packed
- ½ tsp vanilla extract
- 1 large egg
- 1 cup (120 g) all-purpose flour, (stir, spoon & level)
- ¼ cup (20 g) plus 2 Tbsp cocoa powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup (128 g) chocolate chips
Instructions

Cream the butter with both sugars until light and fluffy. Add the vanilla and egg, mixing until combined. Scrape the bowl once or twice to ensure everything is incorporated.

Sift the dry ingredients together: flour, cocoa powder, baking soda, and salt. Gradually add the dry mixture to the wet ingredients and mix until combined.

Fold in the chocolate chips until just incorporated. Do not overmix.

Lightly spray a small cast-iron skillet or a Skookie pan with cooking spray. Press a layer of cookie dough into the bottom of the pan—just enough to cover it. Avoid overfilling, or the cookie may spill over while baking.

Bake at 350°F (175°C) for 5–7 minutes. You want the center warm and gooey, not hard or crispy. Top with a scoop of ice cream and drizzle chocolate or caramel sauce if desired.
Notes
- YIELD: Makes three or more large pizookies, depending on pan size.
- Store any extra cookie dough in a closed container in the refrigerator for up to one week.
- You can also bake these on a cookie sheet for the same amount of time. For families with kids, consider making individual small pizookies and placing each freshly baked cookie in a bowl with ice cream so children don’t touch the hot pan.
