How to melt chocolate with a double boiler

  1. Fill a saucepan about 1/4 full with water and bring to a light simmer. Place a heatproof bowl over the pan and add the chocolate to the bowl. Make sure the bowl fits snugly so steam doesn’t escape.
  2. Ensure the water does not touch the bottom of the bowl—leave a couple of inches of space. Keep the water at a gentle simmer; don’t let it boil vigorously.

  • 12 oz (340 g) Guittard Baking Chips, (semi-sweet or milk chocolate)
  • 6 oz (170 g) Guittard White Baking Chips, (½ package)
  • 2 lbs (908 g) fresh strawberries, room temperature

Instructions

 

  • Wash and dry the strawberries thoroughly. Rinse, drain, and dry completely, including the stems. A salad spinner followed by towel-drying works well.
  • Prepare a pan for the dipped strawberries. Line a cookie sheet with parchment paper or a silicone baking mat.
  • Melt the chocolates in separate double boilers. Bring water to a light simmer, place a heatproof bowl over the pan, and stir constantly until smooth. Ensure the bowl doesn’t touch the water and that steam is contained. Remove and use immediately.
  • Dip the strawberries. Hold each berry by the stem, dip and rotate to coat, then let excess chocolate drip off before placing on the prepared sheet. Chill about 15 minutes until set.
  • Drizzle. For a two-toned look, drizzle white chocolate while the dark coating is wet or after it has set. Use a fork, spoon, or a zip-top bag with a small corner cut. Chill until the drizzle is set.
