Cream Filling:
- ¾ cup (150 g) unsalted butter (12 Tbsp), softened
- 2½ cups (330 g) powdered sugar
- 1 tsp vanilla extract
- 1 Tbsp milk (plus more if needed)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
- In a stand mixer fitted with the paddle attachment, cream the butter and both sugars until light and fluffy. Add eggs and vanilla, mixing until combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture until nearly combined.
- Fold in the oats and mix until incorporated. Scrape the bowl and mix another 10 seconds to ensure an even dough.
