This single-serving Upside-Down Apple Cinnamon Roll cooks in about 2 minutes in the microwave — the perfect fall dessert for one.

Sometimes I want dessert without the fuss or a giant pan lingering in the fridge. A single-serving treat is perfect when you want something warm and sweet without leftovers tempting you all week. That’s why I love this quick, individual upside-down apple cinnamon roll — it satisfies a sweet tooth in minutes and keeps portion control simple.

Best of all, you can make it in one dish in the microwave in about two minutes. The base is a Rhodes Microwave Cinnamon Roll, which is designed to heat in the microwave in about 60 seconds. Adding the apple-cinnamon topping extends cooking time a bit, but the whole process still takes only a couple of minutes for a warm, gooey dessert.

Upside-Down Apple Cinnamon Roll
Ingredients
- 1 Tablespoon (14 g) butter
- 1 Tablespoon brown sugar
- 1/4 tsp cornstarch
- 1/4 tsp ground cinnamon
- 1/2 tsp lemon juice
- 1/4 to 1/2 of an apple, peeled and thinly sliced
- 1 Rhodes Microwaveable Cinnamon Roll
Instructions
- Place 1 tablespoon of butter in a 3½ to 4-inch microwave-safe ramekin. Microwave about 30 seconds, or until melted.
- Stir in 1 tablespoon brown sugar, 1/4 tsp cornstarch, 1/4 tsp cinnamon, and 1/2 tsp lemon juice until combined.
- Peel and thinly slice an apple. Use about 1/4 to 1/2 of the apple slices to layer across the bottom of the ramekin with the cinnamon-sugar mixture.
- Place one Rhodes Microwave Cinnamon Roll on top of the apple slices.
- Microwave for approximately 2 minutes, until the cinnamon roll has puffed up and cooked through. It should rise near the top edges of the dish.
- Using a hot pad, remove the ramekin from the microwave and immediately invert it onto a plate so the apple layer becomes the topping. Serve warm.
- Optional: Drizzle the included cream cheese frosting packet over the roll for extra sweetness.
Notes
No special equipment is required beyond a microwave-safe ramekin. Adjust apple amount to your preference; firmer apple varieties work well when sliced thin.
