
When I discovered this recipe I was instantly excited. It’s rare to find a healthy dish that makes me jump up and head to the store to gather everything I need. This one promised bold flavor while staying nutritious, and it delivered.
I’m not obsessive about dieting — I’ve lost 43 lbs over the past 10 months while still enjoying the recipes I share — and these burgers proved that healthy food can also be irresistible. The combination of vegetables and seasonings gives them terrific texture and flavor, while the peanut sauce adds a nutty, slightly spicy finish.


Thai Turkey Burgers with Peanut Sauce
Ingredients
For the Burgers:
- 1 lb lean ground turkey breast (I used 3/4 lb and made 3 patties)
- 1/2 cup shredded carrot
- 1/2 cup finely chopped broccoli
- 3 Tbsp chopped cilantro
- 2 green onions, sliced
- 1/2 tsp salt
- 1/4 tsp red pepper flakes
- 1/8 tsp ground black pepper
- Sandwich Thins, for serving
- Crisp lettuce or spinach leaves, for serving
For the Peanut Sauce:
- 3 Tbsp creamy peanut butter
- 1 Tbsp rice vinegar
- 1 Tbsp reduced-sodium soy sauce
- 1 Tbsp water
- 1 clove garlic
- 1 tsp sesame oil
- 1/2 tsp hot chili sauce (sriracha)
- 1 tsp honey
- 1/4 tsp ground ginger
Instructions

Make the peanut sauce: combine peanut butter, rice vinegar, soy sauce, water, garlic, sesame oil, sriracha, honey and ground ginger in a blender or food processor. Blend until very smooth. Reserve 2 Tbsp + 2 tsp of the sauce for serving and set aside.

In a large bowl, mix the remaining peanut sauce with the turkey, shredded carrot, chopped broccoli, cilantro, green onions, salt, red pepper flakes and black pepper. Combine thoroughly and form into 4 patties if using 1 lb of turkey.

Heat a large skillet over medium-high and coat with non-stick spray. Cook the patties 3–4 minutes on one side, spray the top lightly with non-stick spray, flip and cook 3–4 minutes more, or until no longer pink in the center. You can also grill them; be sure the grill rack is well oiled.

Assemble the burgers: place each patty on a Sandwich Thin, top with about 2 teaspoons of the reserved peanut sauce, add lettuce or spinach for crunch, and serve immediately.
