New Year’s Eve tends to be a grazing night for many of us, and a cheeseball with crackers is a classic party staple. This simple Ranch & Onion Cheeseball pairs creamy Neufchatel with ranch seasoning and fresh green onions for bright flavor. Serve it with your favorite crackers for easy snacking all evening.

I rolled mine in crushed buttery crackers instead of nuts so it’s approachable for guests with nut sensitivities. Note that cracker coatings can soften a bit after a day or two in the fridge as they absorb moisture from the cheeseball, so it’s best enjoyed within a couple of days.


Ranch & Onion Cheeseball
Ingredients
- 2 (8 oz) packages Neufchatel cream cheese
- 2 packets dry ranch mix
- 3–4 green onions, thinly sliced
- 6–10 buttery crackers, crushed (for coating)
Instructions
- In the bowl of a stand mixer fitted with the paddle attachment, beat the Neufchatel cream cheese, dry ranch mix, and sliced green onions until well combined and smooth.
- Spoon the mixture onto a large piece of plastic wrap. Wrap tightly and shape into a ball. Chill briefly if the mixture is too soft to handle, then unwrap and roll the ball in the crushed buttery crackers until evenly coated.
- Keep the cheeseball covered and refrigerated until serving. Serve with your favorite crackers.
Notes
For a nut option, roll in chopped toasted pecans or walnuts. If using nuts for guests without allergies, they add a pleasant crunch. If you plan to store leftovers, expect the cracker coating to soften after a day or two; for best texture, enjoy within 48 hours.
