Cornbread Waffles with Chili

Ingredients

  • 1 cup (160 g) yellow cornmeal
  • 1 cup (120 g) all-purpose flour
  • 1 Tbsp baking powder
  • ½ cup (100 g) granulated sugar
  • 1 tsp salt
  • 1 cup (237 g) milk
  • 1 large egg
  • ¼ cup (57 g) butter, melted
  • 2 cans of your favorite chili

Instructions

  • In a bowl whisk together the cornmeal, flour, baking powder, sugar, and salt. Add the milk, egg, and melted butter, then whisk gently until just combined.
  • Preheat your waffle maker to medium-high heat (my setting is about 3½ out of 5).
  • Spray the waffle iron lightly with baking spray or brush with oil to prevent sticking.
  • Pour enough batter to nearly fill the waffle mold—about 1/3 to 1/2 cup, depending on your iron. The batter will puff and spread while cooking.
  • Cook according to your waffle maker’s directions. These cornbread waffles brown faster than regular waffles, so watch them closely. Repeat with the remaining batter; this yields roughly 7 standard waffles. Keep finished waffles warm under a towel on a plate.
  • Warm the chili and serve over the waffles. Top with sour cream, shredded cheese, chopped onions, or your favorite garnishes.
