The Irresistible Allure of Raspberry and Lemon
If there’s one berry that captures hearts with its unique profile, it’s the raspberry. Its perfect balance of tartness and sweetness, coupled with an intensely fruity aroma, makes it a star in any dessert. When I pick up a carton of these ruby jewels, I often find myself hoarding them, savoring each one as if it were a precious piece of fine chocolate. They demand appreciation, and rightly so!
The pairing of raspberry with lemon is a match made in culinary heaven. The zesty, bright notes of lemon cut through the sweetness and enhance the berry’s natural tang, creating a flavor symphony that is both refreshing and comforting. This dynamic duo transforms these rolls from a simple pastry into an extraordinary experience, bursting with sunshine and berry goodness in every bite.

Baking Simplified: The Magic of Frozen Dough
For many home bakers, the thought of making bread from scratch can be daunting – the kneading, the proofing, the floury mess! But what if I told you that you could achieve bakery-quality rolls with minimal fuss? The secret lies in high-quality frozen dough, and that’s precisely what makes these Raspberry Lemon Rolls so approachable and delicious. I often shy away from using fresh, ripe fruit in baked goods, preferring to enjoy them in their natural, juicy state. This is why frozen berries are a game-changer for recipes like this; they maintain their integrity and flavor beautifully during baking, and using them straight from the freezer simplifies the process even further.
Rhodes frozen dough has been a staple in my kitchen for years. It eliminates the time-consuming process of dough preparation, allowing me to skip straight to the fun part of assembling and baking. Whether it’s for savory pizzas or sweet rolls, Rhodes dough consistently delivers a soft, fluffy texture and an authentic homemade taste. In fact, my son is so accustomed to our Rhodes dough creations that he proudly refers to all rolls as “Rhodes rolls,” and is genuinely puzzled when his friends haven’t heard of them! It’s a testament to how seamlessly this product integrates into our family’s baking routine, making delicious treats accessible to everyone.

The Perfect Sweet & Tart Indulgence
These raspberry lemon rolls were an instant hit when I first made them for Easter, and I simply couldn’t wait to share this recipe with you all! Each roll is a masterpiece of textures and flavors. As they bake, the sweet raspberry filling caramelizes and becomes wonderfully sticky at the bottom, creating a delightful contrast to the tender, fluffy dough. To complete this symphony, we generously slather them with a bright, tangy lemon cream cheese frosting. The combination of the gooey berry bottom, the soft roll, and the creamy, zesty topping is truly magical – a perfect balance of sweetness and citrus that will leave you craving more. These rolls are not just a breakfast item; they are a celebration, perfect for a special brunch, a delightful dessert, or simply a sweet treat to brighten any day.

Ingredients
Raspberry Rolls
- 1 loaf Rhodes White Bread, thawed and slightly risen
- ¼ cup (57 g) butter, softened
- ¼ cup (50 g) brown sugar, gently packed
- 2 cups (280 g) frozen raspberries, (keep frozen until ready to use)
- ⅓ cup (68 g) granulated sugar
- zest of 1 lemon
- 1 Tbsp cornstarch
Frosting
- 8 oz (226 g) block-style cream cheese
- zest of one lemon
- ½ cup (113 g) butter
- 1 cup (120 g) powdered sugar
- 1 tsp lemon extract
Instructions
-
Roll the thawed and slightly risen dough into a large rectangle, approximately 12-inches wide by 18-inches long. Evenly smear the softened butter over the entire surface of the dough, leaving one of the long edges bare. Sprinkle the brown sugar on top of the butter, then gently spread it with your fingers to ensure full coverage.
-
In a separate bowl, toss the frozen raspberries with the granulated sugar, lemon zest, and cornstarch. Ensure the raspberries are coated evenly. Immediately sprinkle this mixture over the brown sugar layer on your dough. Important: Only remove the raspberries from the freezer when you are ready for this step, as they will quickly become juicy and wet once combined with sugar.
-
Carefully roll the dough tightly from the long end with the raspberries towards the long end that was left bare. Pinch the seams firmly to seal the roll, then place it seam-side down. To cut the rolls into 12 even pieces without flattening them, use unflavored dental floss. Slide the floss underneath the dough, then criss-cross it over the top and pull outwards until it cleanly cuts through. Dip the floss in a little flour if it starts to stick. This technique helps maintain the rolls’ beautiful shape.
-
Arrange the cut rolls inside a greased 13×9-inch baking dish. Gently press down on the tops of the rolls to slightly flatten them. Cover the dish with greased plastic wrap and allow the rolls to rise in a warm place until they have doubled in size, which typically takes about 1 hour. It’s normal for some raspberry juices to ooze out during this process; this will create a wonderfully sticky bottom.
-
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Bake the rolls for 20 to 25 minutes, or until the tops are golden brown and the dough is thoroughly cooked through to the center and bottom. Once baked, remove from the oven and allow the rolls to cool slightly in the dish before frosting.
-
While the rolls cool, prepare the frosting. In a large bowl, beat the softened cream cheese and lemon zest with an electric hand mixer until smooth and creamy. Add the softened butter, one tablespoon at a time, mixing well after each addition until fully incorporated and smooth. Finally, add the powdered sugar and lemon extract all at once. Mix on low speed until combined, then increase to medium-high and beat until light and fluffy. Spread this delectable frosting generously over the slightly warm raspberry rolls and serve immediately. You might find you have a little extra frosting, which is fantastic on French toast or even just by the spoonful!
Notes
For best results, ensure your Rhodes White Bread dough is completely thawed and has just begun to rise before rolling. This will make it easier to handle and achieve the desired rectangle shape.
The cornstarch in the raspberry filling helps to thicken the juices released during baking, preventing the rolls from becoming too soggy and ensuring a delicious, gooey consistency.
If you don’t have lemon extract for the frosting, you can use an additional tablespoon of fresh lemon juice, but the extract provides a more concentrated lemon flavor.

Tips for Perfect Raspberry Lemon Rolls
- Dough Thawing: For best results, allow your frozen dough to thaw overnight in the refrigerator, then let it come to room temperature for about an hour before you plan to roll it out. This ensures it’s pliable and easy to work with.
- Don’t Overwork the Dough: While rolling, avoid pressing too hard or overworking the dough, which can make it tough. A gentle, even pressure is all you need.
- Keep Raspberries Frozen: The instruction to keep raspberries frozen until the very last moment is crucial. If they thaw too much before mixing with sugar and cornstarch, they will release excessive moisture, making the filling watery and difficult to manage.
- Floss for Clean Cuts: Using dental floss (unflavored, of course!) is a fantastic trick for cutting cinnamon rolls or similar pastries. It prevents smashing the delicate layers, resulting in perfectly round, professional-looking rolls. If you don’t have floss, a very sharp, thin knife can also work, but use a gentle sawing motion.
- Proper Rising: A warm, draft-free environment is ideal for the dough to rise. If your kitchen is cool, you can place the covered baking dish in a slightly warmed (but turned off) oven or microwave.
- Don’t Rush Baking: Ensure the rolls are fully cooked through. The bottom should be golden brown, and the center cooked, not doughy. An undercooked roll can be disappointing.
Delicious Variations to Try
While these Raspberry Lemon Rolls are perfect as is, you can certainly experiment with variations to suit your taste:
- Mixed Berry Delight: Swap out some of the raspberries for blueberries or blackberries for a different berry medley.
- Nutty Addition: Add a sprinkle of finely chopped almonds or pecans to the filling for extra texture and a hint of nuttiness.
- Cream Cheese Glaze: If you prefer a lighter topping, you can make a simple glaze with powdered sugar, a splash of lemon juice, and a tiny bit of milk or cream, instead of the richer cream cheese frosting.
- Lime Zest: For a slight twist, use lime zest instead of lemon zest in the filling or frosting for a distinct citrus aroma.
Storage and Reheating
These rolls are best enjoyed fresh, warm from the oven, with the frosting slightly melted. However, leftovers can be stored and reheated.
- At Room Temperature: If planning to eat within a day, store unfrosted rolls in an airtight container at room temperature. Frost before serving.
- Refrigeration: Frosted rolls can be stored in an airtight container in the refrigerator for up to 3-4 days.
- Freezing: You can freeze baked and frosted rolls by wrapping them individually in plastic wrap, then placing them in a freezer-safe bag or container for up to 1 month.
- Reheating: To reheat, warm individual rolls in the microwave for 15-30 seconds, or heat a larger batch in an oven preheated to 300°F (150°C) for 10-15 minutes until warmed through.
Frequently Asked Questions (FAQs)
- Can I use fresh raspberries instead of frozen?
- While you can, frozen raspberries are recommended because they hold their shape better during baking and release less liquid all at once, which can make the rolls soggy. If using fresh, you might want to increase the cornstarch slightly and ensure they are very cold before mixing into the filling.
- What if I don’t have Rhodes White Bread dough?
- Any brand of frozen white bread dough or dinner roll dough can likely be substituted. Just ensure it’s thawed and ready to be rolled out as a sheet.
- Can I make these rolls ahead of time?
- Yes! You can prepare the rolls up to the point of placing them in the baking dish after cutting (Step 3). Cover them tightly with greased plastic wrap and refrigerate overnight. The next morning, let them come to room temperature and rise for about 1-2 hours before baking as directed.
- Is the lemon zest really necessary?
- Absolutely! Lemon zest contains essential oils that provide a bright, concentrated lemon flavor without adding extra liquid, making a significant difference to the overall taste and aroma of both the rolls and the frosting.
- My rolls didn’t rise, what went wrong?
- Dough not rising sufficiently can be due to several factors: the dough might not have been fully thawed, your kitchen might be too cold, or the yeast in the dough might have been compromised. Ensure a warm environment for rising.
