Ingredients
- 3 large eggs
- 1 ½ cups granulated sugar
- 5 ripe peaches, pitted and chopped (yields approximately 2 ¼ – 2 ½ cups puree)
- 2 ½ cups heavy cream
- ½ cup whole milk
- ¼ teaspoon fine salt
- 1 teaspoon vanilla bean paste (optional, but highly recommended)
- A few drops of orange food coloring (optional, for vibrant color)
Instructions
- The night before you plan to make the ice cream, place the chilling bowl of your ice cream maker and any freezer-safe containers for storage into the freezer.
- In a large, heat-proof bowl, whisk the eggs until smooth and light. Gradually whisk in the granulated sugar until the mixture is thoroughly combined and smooth.
- Puree the chopped peaches in a food processor or blender until smooth. Stir the peach puree (approximately 2 ¼ – 2 ½ cups) into the egg and sugar mixture.
