Almond Bars

  • 3 ½ cups all-purpose flour (stir, spoon & level)
  • 1 teaspoon Clabber Girl® Baking Powder
  • ½ teaspoon salt
  • 1 cup Crisco® Butter Flavor All-Vegetable Shortening Sticks (1 baking stick)
  • 2 cups granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon pure almond extract

Topping

  • 1 Tablespoon milk (any variety)
  • 1 cup sliced almonds

Glaze

  • 1 cup powdered sugar
  • ¼ teaspoon Spice Islands® Pure Almond Extract
  • 2-3 Tablespoons milk (any variety)

Instructions

  1. Preheat oven to 325 degrees Fahrenheit (160°C). Grease a half sheet pan (approximately 18×13-inches) thoroughly with Baker’s Joy® Non-Stick Baking Spray. Set aside.
  2. ALMOND BARS: In a medium bowl, stir together the all-purpose flour, Clabber Girl® Baking Powder, and salt until well combined. Set aside.
  3. In a large bowl, beat the Crisco® Butter Flavor All-Vegetable Shortening and granulated sugar together with an electric hand mixer until combined well and creamy. Add the eggs and almond extract. Beat until fully combined. Add half of the flour mixture. Mix until just incorporated. Repeat with the remaining flour mixture. (NOTE: The dough will be thick and firm. You may find it helpful to use your hands to gently mix in any remaining flour. Do not overwork the dough to ensure tenderness.)
  4. Empty the dough into the prepared pan. Use your fingers or a pastry roller to spread the dough evenly and smoothly into the pan, pressing firmly to cover the entire surface.
  5. TOPPING: Brush milk evenly over the top of the dough with a pastry brush. Sprinkle generously with sliced almonds, then gently press them lightly into the dough to secure them.
  6. Bake at 325˚F (160°C) for 22-25 minutes. The dough will puff up high during baking and then begin to sink back down. The edges should start to lightly brown; avoid over-browning.
  7. Cool for about 5 minutes in the pan, then use a plastic (disposable) knife to cut 48 bars. Create 6 even rows on the long (horizontal) side by 8 rows on the short (vertical) side to create thin rectangles. (NOTE: The bars may appear slightly underbaked, especially immediately after cutting them while warm, but they will finish baking as they cool completely.) Carefully transfer the cut almond bars to a wire rack placed inside of a clean sheet pan (to catch any glaze drips), leaving a little space in-between each bar. Allow them to cool completely to room temperature.
  8. GLAZE: Once the bars are fully cooled, prepare the glaze by whisking the powdered sugar with the almond extract and 2-3 tablespoons of milk in a small bowl until you reach the desired smooth, drizzling consistency. Drizzle the glaze evenly over the cooled bars and allow the glaze to set completely before eating and/or storing.
