Ingredients

For the Filling:

  • 2 tablespoons extra virgin olive oil
  • 1 cup yellow onion chopped, approximately 1 medium onion
  • 2 teaspoons minced garlic 2 cloves
  • 1 pound ground chicken
  • 1 teaspoon dried thyme
  • ¾ teaspoon dried crushed rosemary
  • 1 ½ teaspoons dried parsley
  • 1 ½ teaspoons kosher salt
  • black pepper to taste
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all-purpose flour or 1 tablespoon cornstarch for gluten-free
  • 2 tablespoons tomato paste
  • 1 cup chicken stock
  • 16 ounces frozen peas and carrots
  • 8 ounces frozen sweet corn

For the Potato Topping:

  • 1 ½ pounds gold potatoes peeled, cubed (start with ~1¾ lbs unpeeled)
  • 6 tablespoons unsalted butter
  • ⅓ cup whole milk or half and half, warmed
  • ½ teaspoon garlic powder
  • 1 ¼ teaspoons kosher salt adjust to taste, less if you salted your cooking water

Instructions

  • In a medium sauté pan, heat about 2 tablespoons of olive oil over medium-low heat. Add the chopped onion and minced garlic, stirring frequently. Cook until they are mostly translucent, about 5-7 minutes. Then, add the ground chicken, thyme, rosemary, parsley, a few cracks of fresh black pepper, and 1 teaspoon of kosher salt. For maximum flavor, consider browning the chicken in a block first before breaking it up.
  • Increase the heat to medium and continue cooking the chicken, breaking it apart with a spoon, until it is almost fully cooked and no longer pink.
  • Stir in the Worcestershire sauce and tomato paste, ensuring the chicken is well coated. Cook for 1 minute. Sprinkle on the all-purpose flour and stir to incorporate thoroughly, cooking for another minute to create a roux. Pour in the chicken stock and add the frozen peas, carrots, and sweet corn. Continue cooking and stirring frequently until the sauce has thickened significantly and reduced to the point where it holds a line when you run your spatula or spoon through the bottom of the pan. Remove from heat.
  • While the filling simmers, or after setting it aside, place the cubed potatoes in a large saucepan and add enough cold water to just cover them. Cook over high heat until the potatoes are tender and can easily be pierced with a fork or cake tester, about 15-20 minutes.
  • Strain the potatoes completely and transfer them to the bowl of a stand mixer with the paddle attachment, or back to the cooking pot if using a hand masher. Add the butter, the remaining kosher salt (1¼ teaspoons), and garlic powder. Mash until the butter melts and is incorporated. Gradually add the warm whole milk, a bit at a time, until a thick but spreadable consistency is achieved. Be careful not to overmix. Remove any dark spots for a pristine mash.
  • Transfer the thickened filling mixture to a 9×9-inch baking dish or a 2¼-quart oven-safe braiser. Spread it evenly across the bottom.
  • Dollop and spread the mashed potatoes evenly over the top of the filling, paying special attention to sealing the edges against the dish. This prevents the filling from bubbling up and over the topping during baking. You can create decorative swirls or peaks with your spoon.
  • Bake the chicken shepherd’s pie in a preheated oven at 400°F (200°C) for 25 – 30 minutes, or until the filling is bubbly and the mashed potato topping is golden brown. Placing a baking sheet underneath the dish is recommended to catch any drips.
  • For preparing ahead: You can cool, cover, and refrigerate the prepared, unbaked dish for up to 3 days. While this may slightly affect the potato texture, it’s a fantastic meal prep strategy. Alternatively, freeze the assembled, unbaked pie for several months in a freezer-safe container. When ready to bake from frozen, preheat the oven to 400°F (200°C) and bake as directed, extending the baking time as necessary until heated through and golden.
