As summer winds down and the kids head back to school, I wanted to savor the last warm evenings by making s’mores. But these aren’t the ordinary kind — I call them “fancy s’mores” because they pair fresh fruit with premium dark chocolate bars for a more refined, fruity twist on the classic.

All Brookside bars use smooth dark chocolate. For our s’mores we used Summer Berry Crisp, Blueberry & Cranberry Almond, and Mango Coconut Crisp — Mango Coconut Crisp quickly became my favorite of the three. I also picked up fresh strawberries, mango, and blueberries, plus honey and chocolate graham crackers and large marshmallows. The chocolate graham crackers add an extra-special touch for the “fancy” version.

Without a fire pit, we roasted marshmallows over a gas grill. It’s a fun outdoor alternative and gives a similar toasted flavor. For best results, use the grill’s side burner or remove the grates to get closer to the flame when roasting.
Graham crackers + toasted marshmallows + fresh fruit + Brookside chocolate bars = fancy s’mores. These are great to share with friends after the kids are in bed or to enjoy around a small outdoor gathering with people who appreciate thoughtful flavor combinations.

Our first version used chocolate graham crackers, sliced strawberries, a gooey marshmallow, and the Brookside Summer Berry Crisp bar. It tasted like an upgraded chocolate-covered strawberry — simple and delicious.

Fresh mango slices paired with a toasted marshmallow and the Mango Coconut Crisp Brookside bar on honey graham crackers were a standout for me. The tropical notes of mango and coconut complement the dark chocolate beautifully.

The honey graham crackers with fresh blueberries, a warm marshmallow, and the Blueberry & Cranberry Almond bar made a delightful, fruity s’more. Matching the fresh fruit to the chocolate bar is a nice approach, but you can mix and match flavors freely — there are no strict rules.

I also grabbed Brookside pouches of Dark Chocolate Blueberry and Milk Chocolate Almond to make a snacking tray with fresh blueberries, salted cashews, dried cranberries, and mini pretzels. The sweet-and-salty mix was perfect while we toasted marshmallows and assembled s’mores.

Instructions

Roast marshmallows to desired crispness over a fire pit or gas grill.

Layer fruit, a piece of Brookside chocolate bar, and the toasted marshmallow between two graham crackers of your choice.
