Why This Vegetable Chowder Will Become Your New Favorite

Prepare yourselves, because this soup isn’t just “good,” it’s “enjoy-the-leftovers-for-days” good! And coming from someone who typically avoids leftovers, especially those containing meat, that’s high praise. This particular vegetable chowder, however, is a game-changer. Free from meat, its flavors only deepen and meld beautifully overnight, making it just as delicious, if not more so, on the second or even third day. Reheating a bowl for lunch or dinner becomes a simple pleasure, offering a quick, nourishing meal without any compromise on taste or texture.

It’s the kind of dish that makes you grateful for a larger pot, ensuring there’s enough to go around – or, perhaps, enough just for you to savor! On a recent occasion, my husband was at work, and my children, being typical kids with an aversion to cooked vegetables, opted out. Far from being disappointed, I found myself with a delightful bounty of leftovers, and I wasn’t complaining in the slightest. In fact, I’m seriously considering preparing another batch this week, purely for the joy of having a hot, delicious lunch readily available for a few days.

You’ll be rewarded with a remarkably creamy, cheesy broth that perfectly envelops the tender vegetables, all seasoned with straightforward, wholesome spices. It’s a culinary experience that delivers maximum flavor with minimal fuss, making it an ideal choice for busy weeknights or a relaxing weekend meal. Crafting the Perfect Creamy Chowder: Tips and Techniques

Making a truly exceptional vegetable chowder involves a few key steps and considerations that ensure a creamy, flavorful result every time. The foundation of this soup begins with a careful sauté of the aromatics – carrots, celery, onion, and garlic. These humble vegetables, when cooked gently in butter, release their sweet and savory essences, creating a deeply aromatic base that will infuse the entire chowder with incredible depth of flavor. Don’t rush this step; allow them to soften properly to extract maximum taste.

Next comes the magic of the roux. A roux, a mixture of butter and flour, is what gives this chowder its signature rich, thick, and velvety texture. By cooking the flour in the melted butter until it’s fully absorbed, you eliminate any raw flour taste and create a smooth thickening agent. This ensures your chowder won’t be grainy, but rather wonderfully silken. Gradually whisking in the broth and milk prevents lumps and allows the roux to slowly incorporate, building that desirable creamy consistency.

Potatoes are a cornerstone of any good chowder, and here they contribute not only to the heartiness but also to the overall texture. As they simmer, they release some of their starch, further contributing to the chowder’s body. Cutting them into uniform ½-inch cubes ensures they cook evenly and become fork-tender at the same time as the other vegetables. Seasoning is crucial, and while salt and pepper are essentials, don’t forget the dried thyme, which adds a warm, earthy note that complements the vegetables and cheese beautifully. Remember that the cheeses added later will bring their own saltiness, so taste and adjust as you go.

Finally, the broccoli florets are added towards the end to ensure they cook through but retain a slight bite and their vibrant green color. Overcooked broccoli can become mushy, so keep an eye on it. The addition of half & half at the end, along with the generous amounts of sharp cheddar and parmesan cheese, transforms the broth into an even more decadent and irresistible concoction. Stirring until the cheeses are fully melted and incorporated creates that luxurious, stretchy, cheesy goodness that makes this chowder so utterly comforting.

Variations and Customizations for Your Vegetable Chowder

One of the many wonderful aspects of this vegetable chowder is its versatility. While the core recipe is a winner, it serves as an excellent canvas for customization, allowing you to tailor it to your personal preferences or what you have on hand. Don’t like a lot of broccoli? Simply reduce the amount, or swap it for another favorite green vegetable. Cauliflower, green beans, or even spinach (stirred in at the very end until wilted) would make delicious additions.

Feeling adventurous with your vegetables? Consider adding other diced ingredients like bell peppers for a touch of sweetness and color, or corn kernels for a burst of natural sweetness. A handful of frozen peas can also be a quick and easy addition. For those who prefer a slightly richer chowder, using whole milk or even heavy cream instead of 1% milk will deepen the creaminess. Conversely, a lighter touch can be achieved with skim milk, though you might sacrifice a bit of the luxurious mouthfeel.

While this recipe shines as a vegetarian dish, if you’re looking to add a protein boost, fully cooked and diced chicken breast or even crispy bacon bits can be stirred in at the end. For a smoky flavor, a small amount of diced, cooked ham or a pinch of smoked paprika would be delightful. Don’t hesitate to experiment with different types of cheese either. Monterey Jack, Colby, or a blend of your favorite melting cheeses could offer unique flavor profiles. A sprinkle of red pepper flakes can introduce a subtle warmth and hint of spice for those who enjoy a little kick.

This chowder also lends itself beautifully to various seasoning enhancements. Beyond salt, pepper, and thyme, a touch of onion powder or garlic powder can amplify the savory notes. A dash of Nature’s Seasons from Morton, or even just garlic salt, as suggested, can provide a well-rounded flavor boost. Remember to taste as you season, especially when adding salty ingredients like cheese or seasoned salts, to ensure a perfectly balanced flavor profile.

Ingredients

  • 4 Tbsp butter
  • 1 ⅓ cups diced carrots (about 3 carrots)
  • 1 cup diced celery (2 stalks)
  • 1 cup diced onion (1 small or ½ large onion)
  • 2 cloves garlic, minced (about 1 tsp)
  • 6 Tbsp all-purpose flour
  • 3 cups low-sodium chicken or vegetable broth
  • 3 cups milk (I used 1 %)
  • 3 ½ cups russet potatoes, peeled and cut into ½” cubes (2 to 3 medium potatoes)
  • 1 tsp dried thyme
  • Salt and pepper, to taste (You can also use a little Nature’s Seasons from Morton, or garlic salt is great too!)
  • 3 cups broccoli florets, cut small (from about 2 heads of broccoli; only do 1 broccoli crown if you don’t like a lot of broccoli)
  • 1 cup half & half
  • 8 oz shredded sharp cheddar cheese
  • ⅓ cup finely shredded parmesan cheese

Instructions

  1. In a large stock pot, melt butter and add the carrots, celery, onion, and garlic. Saute for 5 minutes or until vegetables are tender.
  2. Add the flour and stir until the butter and liquid from the vegetables soaks it all up, then cook for 1 minute.
  3. Slowly pour in the broth and milk, stirring as you pour. Add the potatoes and seasonings, to taste. Keep in mind that the cheese added later will add saltiness as well. Bring mixture to a boil and cook 15 minutes, stirring every 5 minutes, until the potatoes are fork tender.
  4. Add the broccoli and cook an additional 5 minutes or until tender. Then add the half & half and shredded cheeses. Stir until melted. Remove from heat and serve warm.

Notes

This chowder is fantastic with a side of crusty bread for dipping, or a light green salad to balance the richness. For meal prepping, store individual portions in airtight containers in the refrigerator for up to 3-4 days. It reheats beautifully on the stovetop over low heat, or in the microwave.

Serving Suggestions and Storage Tips

This hearty Vegetable Chowder is a meal in itself, but it pairs wonderfully with a few simple accompaniments. A rustic, crusty bread or a warm baguette is perfect for soaking up every last drop of the creamy, cheesy broth. For a lighter touch, a crisp green salad with a vinaigrette dressing provides a refreshing contrast to the richness of the soup. Croutons, a sprinkle of fresh chopped parsley, or a dollop of sour cream can also add a delightful finish to each bowl.

When it comes to storage, this chowder is a dream for meal prep. Allow any leftover soup to cool completely before transferring it to airtight containers. It will keep beautifully in the refrigerator for 3-4 days, making it an excellent option for quick and easy lunches or dinners throughout the week. To reheat, gently warm on the stovetop over low to medium heat, stirring occasionally, until heated through. You might need to add a splash of milk or broth to loosen it up if it has thickened too much in the fridge. While some creamy soups don’t freeze well due to dairy separation, this chowder tends to hold up reasonably well if frozen without the final half & half and cheese, which can then be stirred in upon reheating. For best results when freezing, consider freezing the base soup before adding the dairy and cheese, then adding them fresh when you thaw and reheat.
