Berries:
- ½ cup (70 g) frozen triple berry blend (blackberries, raspberries, blueberries)
- ½ Tbsp granulated sugar
- ½ Tbsp cornstarch
Vanilla Cake:
- ¼ cup (30 g) all-purpose flour
- ⅛ tsp baking powder
- 1 ½ Tbsp granulated sugar
- 1 Tbsp (14 g) butter, melted
- 3 Tbsp milk
- ¼ tsp vanilla extract

In a mug or microwave-safe glass cup (at least 1½ cups capacity), combine the frozen berries, sugar, and cornstarch. Stir gently until the fruit is coated, then microwave for 1 minute.

While the fruit microwaves, whisk together the flour, baking powder, and sugar in a small bowl. Add the melted butter, milk, and vanilla; whisk until mostly smooth with a few small lumps remaining. Pour the batter over the hot fruit and microwave for 2 more minutes. The cake will puff up and should be cooked through. Serve warm, optionally topped with vanilla ice cream.
