  • 1 cup (226 g) unsalted butter, softened (2 sticks)
  • 1 ¼ cup (250 g) light brown sugar, gently packed
  • 1 ¼ cup (100 g) quick-cooking rolled oats
  • 1 ¾ cup (210 g) all-purpose flour, (stirred, spooned, & leveled)
  • ½ tsp salt
  • 1 ¼ tsp baking powder

Raspberry Filling:

  • 24 oz (680 g) fresh or frozen raspberries
  • ½ – 1 cup (100-200 g) granulated sugar, adjust to your berries’ tartness
  • ¼ cup (40 g) cornstarch
  • 1 Tbsp fresh lemon juice

  • 13×9-inch baking pan
  • Parchment Paper
  • Fine Mesh Strainer
  • Mixing Bowls with Airtight Lids

Instructions

  • Preheat your oven to 350 degrees Fahrenheit (175°C). Prepare a 9×13-inch baking pan by lightly greasing it, or for easy removal, line it with parchment paper leaving an overhang on the sides.

  • In a large mixing bowl, combine all the ingredients for the crust and topping: softened butter, brown sugar, quick oats, all-purpose flour, salt, and baking powder.
