Zesty & Tropical: The Ultimate Lemon Coconut Cupcakes with Italian Meringue Buttercream
Prepare to tantalize your taste buds with these extraordinary Lemon Coconut Cupcakes. Imagine a perfectly moist, tender coconut cake, lovingly infused with both dried coconut and rich coconut milk. But the magic doesn’t stop there. Each cupcake boasts a delightful surprise filling of sweet and tangy lemon curd, crowned with a cloud of luscious lemon Italian Meringue Buttercream. This recipe is an absolute showstopper, combining vibrant citrus notes with the exotic sweetness of coconut, making it an ideal treat for any occasion, especially as a refreshing dessert for spring or summer gatherings.

Why These Lemon Coconut Cupcakes Are Simply Irresistible
What makes these lemon coconut cupcakes stand out from the crowd? It’s the thoughtful layering of complementary flavors and textures that creates a truly unforgettable dessert experience. The foundation is a uniquely formulated coconut cake, designed for maximum moisture and a delicate crumb. We achieve this by incorporating both finely ground coconut flour (which is actually just processed unsweetened coconut, more on that later!) and creamy coconut milk, ensuring a rich, authentic coconut taste in every bite.
But the true heart of these cupcakes lies in their exquisite filling. A generous dollop of homemade lemon curd provides a burst of bright, zesty tartness that perfectly balances the sweetness of the cake. This is then beautifully complemented by a light-as-air Italian Meringue Buttercream, which can be subtly flavored with either lemon or coconut extract, depending on your preference. This careful combination ensures a dessert that is not overly sweet, but rather a sophisticated symphony of tropical and citrus notes, making them perfect as a light finish to any meal or a delightful afternoon treat.

My Love Affair with Lemon Desserts
If you’ve followed my recipes for a while, you know my undeniable passion for lemon desserts. I’m currently in what I affectionately call a “lemon moment” – I simply crave lemon everything! From a comforting lemon bread pudding to a decadent lemon meringue cheesecake, and even chewy lemon blondies, the vibrant zest and tart sweetness of lemon always captivate me.
This deep adoration for citrus led me to create these ultimate lemon coconut cupcakes. Speaking of lemon, I often find myself with extra lemon curd on hand. My initial grand plans for it usually involve intricate pastries, but more often than not, I end up savoring every last tangy-sweet spoonful straight from the jar. It’s a confession, but a delicious one! If you share my love for all things lemon, these cupcakes are definitely a recipe you’ll want to add to your repertoire. They strike the perfect balance between the brightness of lemon and the rich, tropical essence of coconut.

The Secret to Effortless Lemon Curd
During the development of this lemon coconut cupcake recipe, I revisited my original Lemon Curd recipe. To my surprise, I found it to be overly complicated and unnecessarily arduous. Cooking should be enjoyable, not a chore! Drawing on my culinary school expertise, I realized that making homemade lemon curd doesn’t have to be a daunting task.
I completely streamlined the process, updating the recipe with precise measurements and simplifying the cooking method significantly. Now, my perfected lemon curd can be made in a single pan with essentially just two straightforward steps. This “easy peasy” approach ensures you get that gorgeously smooth, intensely flavored lemon curd without any fuss, leaving you more time to enjoy your baking and, of course, to sneak a few spoonfuls! This simplified method is a game-changer for anyone who loves the bright, tangy flavor of fresh lemon curd but shies away from complex recipes.

Mastering the Italian Meringue Buttercream
These magnificent cupcakes were the perfect canvas for my signature Italian Meringue Buttercream. This frosting is renowned for its incredibly silky texture, stability, and not-too-sweet profile, making it a favorite among professional bakers. What’s fantastic about this buttercream is its versatility in flavoring. You can enhance it with a few drops of lemon extract for an extra citrusy kick, or opt for coconut extract to bring out more tropical notes, depending on which flavor you wish to be most prominent.
On the day I baked these, I was definitely in a lemony mood, so a touch of lemon extract went into my buttercream. And yes, I may have spooned an extra helping of lemon curd right on top of the frosting before serving. It might have looked a little “out of control” aesthetically, but the flavor combination was absolutely fantastic. A quick note on frosting: there’s a delicate balance between the amount of buttercream that looks picture-perfect on a cupcake and the amount you’d actually want to eat. I often lean towards the former for presentation, but feel free to frost to your personal preference! Remember, the goal is deliciousness.

Ingredient Spotlight: Coconut Milk
A crucial detail for the success of these cupcakes is the type of coconut milk used. For this recipe, I specifically recommend the coconut milk that comes in a carton, typically found in the dairy or alternative milk section of your grocery store. This is distinctly different from the super thick, rich coconut milk sold in cans, which often has a higher fat content and a denser consistency. The carton variety should have a consistency similar to whole dairy milk, ensuring it blends seamlessly into the batter for a light and tender crumb.
If you only have access to canned coconut milk and find it too thick, don’t worry! You can easily thin it out with a little water until it reaches the desired consistency. It’s important to use the thinner liquid portion of canned coconut milk and avoid the thick, solid coconut cream that often separates and rises to the top, as it can make your cupcakes heavy and greasy. Using the correct type of coconut milk ensures your cupcakes have the ideal light and moist texture, preventing them from becoming too dense or oily. This small detail makes a big difference in the final product!

Ingredients
For the Cupcakes:
- 1 cup All-purpose flour
- ¾ cup coconut flour See Note
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup butter melted
- 1 cup sugar
- 4 eggs
- ¾ cup coconut milk
- ½ cup Sweetened shredded coconut toasted
- 1 cup Lemon Curd
- 3 quarts Italian Meringue Buttercream
- ½ teaspoon Lemon or coconut extract to taste
Instructions
-
Preheat oven to 350˚F (175°C). Line 28 cupcake tins with liners. You can bake in 2 batches if you don’t have enough tins.
-
Whisk together the all-purpose flour, coconut flour, baking powder, and salt in a medium bowl; set aside.
-
Using a hand mixer or stand mixer fitted with the paddle attachment, beat together the melted butter and sugar on medium-high speed until thick and lighter in color, about 2-3 minutes. Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl between each addition to ensure everything is incorporated.
-
Alternately add the dry flour mixture and coconut milk in three additions on low speed, beginning and ending with flour. Scrape down the sides of the bowl as needed. Add the next addition when your batter is still slightly streaky; waiting too long can lead to overmixing. Stop mixing as soon as the last of the flour has just disappeared. For best results, I like to fold in the final addition of flour by hand with a spatula to prevent over-beating, which can result in tough cupcakes.
-
Scoop or pour the batter into the prepared liners, filling each about ¾ full. A large cookie scoop works perfectly for this task, ensuring even-sized cupcakes. Sprinkle some toasted coconut on top of each filled cupcake before baking. Bake in the preheated oven for 15-20 minutes. Begin checking for doneness around the 12-minute mark, as ovens can vary and we want to avoid dry cupcakes. The cupcakes are ready when a toothpick inserted into the center comes out with a few moist crumbs clinging to it, but no wet batter.
-
Remove the cupcakes from the tins immediately after baking and transfer them to a wire rack to cool completely. They must be entirely cool before proceeding with the filling and frosting.
For the Assembly:
-
Once the cupcakes are cool, cut a small hole in the top of each using a pairing knife or a cupcake corer. Fill each cavity with approximately 2 teaspoons of lemon curd. I often don’t measure precisely, preferring to generously fill the hole – the more curd, the merrier! And rest assured, those little bits of cake you remove won’t go to waste; they’re the baker’s treat!
-
Fit a piping bag with your favorite decorative tip (I used an Ateco 883 here for a lovely swirl). Fill the bag with your prepared Italian Meringue Buttercream and pipe the desired amount onto each cupcake. While I advocate for plenty of lemon curd, with buttercream, I suggest piping an amount that looks beautiful and is enjoyable to eat.
-
For a final touch, sprinkle with more toasted coconut. These cupcakes are best enjoyed the day they are made for optimal freshness and texture.
Notes
Baking Powder vs. Baking Soda: Do not substitute baking soda for baking powder in this recipe. Baking soda requires an acidic ingredient to react and create lift, which is not sufficiently present in this formulation. Using baking soda will result in dense, flat, and potentially soapy-tasting cupcakes. Stick to baking powder for the best results.
Make Ahead Tips: Both the Italian Meringue Buttercream and the lemon curd can be prepared up to a week in advance and stored in the refrigerator. Before frosting, allow your buttercream to come to room temperature, then beat it vigorously in a stand mixer fitted with a paddle attachment until it regains its light and fluffy consistency. More detailed instructions for refreshing buttercream are available in my dedicated tutorial.

Beyond the Recipe: Tips for Baking Success
Achieving bakery-quality Lemon Coconut Cupcakes at home is entirely possible with a few key considerations. Here are some professional tips to ensure your baking experience is smooth and the results are spectacular:
Choosing Your Coconut: Dried, Shredded, and Milk
- Coconut Flour: As noted in the recipe, the “coconut flour” here refers to finely ground, unsweetened coconut flakes. This is different from the highly absorbent gluten-free baking flour often sold as coconut flour. You can easily make your own by pulsing unsweetened coconut flakes in a food processor until it reaches a fine, flour-like consistency. This adds incredible coconut flavor and moisture without making the cake too dense, contributing to the signature texture of these cupcake recipes.
- Toasted Shredded Coconut: For garnish and added texture, toasting your shredded coconut (sweetened or unsweetened, depending on your preference) beforehand intensifies its flavor and gives it a lovely golden hue. Simply spread it on a baking sheet and toast in a preheated oven at 300°F (150°C) for 5-10 minutes, stirring occasionally, until golden brown. Keep a close eye on it, as coconut can burn quickly!
- Coconut Milk: The key to the tender crumb is using carton coconut milk, which has a consistency similar to whole dairy milk. Canned coconut milk tends to be much thicker. If you must use canned, use only the thinner liquid part and dilute it slightly with water if it’s still too thick. Avoid the thick, creamy fat at the top of the can for this recipe, as it can make the cupcakes too heavy and oily.
Perfecting Your Lemon Curd and Buttercream
- Lemon Curd: Don’t be intimidated by homemade lemon curd! My simplified recipe (linked above) makes it a breeze. The key is constant whisking over medium-low heat until it thickens. For the ultimate smooth curd, strain it through a fine-mesh sieve after cooking to remove any bits of cooked egg or zest. This extra step ensures a professional, velvety texture in your lemon curd recipes.
- Italian Meringue Buttercream: This frosting requires a few more steps than American buttercream, but the silky-smooth, less-sweet result is well worth it. Ensure your butter is at room temperature for the best emulsion. If your buttercream looks curdled, don’t panic! Keep beating it on medium-high speed; it will come together beautifully. You can also explore other frosting options like marshmallow fluff or marshmallow frosting, or even a classic vanilla American buttercream. For an extra lemon punch, my lemon buttercream frosting is also a fantastic choice, especially if you’re a devout lemon lover.
Baking and Assembly Best Practices
- Don’t Overmix: Overmixing the batter after adding flour can develop the gluten too much, resulting in tough cupcakes. Mix only until just combined. Folding in the last bit of flour by hand with a spatula is a great technique to prevent this and ensure a tender crumb.
- Cool Completely: This is non-negotiable! Filling and frosting warm cupcakes will lead to melted frosting, a runny filling, and a messy situation. Patience is a virtue here; allow the cupcakes to cool fully on a wire rack before proceeding.
- Filling the Cupcakes: While a pairing knife works well for coring, a dedicated cupcake corer can make the task even quicker and cleaner, creating uniform cavities. Feel free to be generous with the lemon curd; it’s one of the star components of these delightful treats!
- Storage: Store frosted cupcakes in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 4 days. Bring them to room temperature before serving for the best flavor and texture.
Serving Suggestions and Flavor Variations
These lemon coconut cupcakes are a complete dessert on their own, perfect for birthdays, potlucks, or simply a delightful weekend treat. Their bright, refreshing flavors make them particularly suitable for spring and summer festivities, echoing the lightness and vibrancy of the season.
Creative Topping Ideas
While toasted coconut is the classic and highly recommended garnish for these tropical delights, consider these alternatives to add your own personal touch:
- Fresh Berries: A few fresh raspberries, blueberries, or even sliced strawberries on top would add a burst of color, a hint of acidity, and a lovely fresh, fruity counterpoint to the lemon and coconut.
- Candied Lemon Peel: For an elegant touch and intensified lemon flavor, finely chopped candied lemon peel scattered over the frosting provides a sophisticated garnish with a delightful chew.
- White Chocolate Curls: A sprinkle of delicate white chocolate curls can add a touch of sweetness and visual appeal, complementing the creamy flavors.
Explore More Tropical & Citrus Combinations
If you love the flavor profile of these lemon coconut cupcakes, you might also enjoy experimenting with these variations for future baking projects:
- Lime Coconut Cupcakes: Substitute fresh lime zest and juice for lemon in both the curd and buttercream for a slightly different, perhaps even more exotic, citrus twist. Lime pairs beautifully with coconut!
- Pineapple Coconut Cupcakes: Incorporate finely crushed, well-drained pineapple into the cake batter for added moisture and tropical flavor. You could also try a pineapple curd filling for an ultimate pina colada-inspired dessert.
- Orange Coconut Cupcakes: Use orange zest and juice in place of lemon for a sweeter, less tart flavor profile. This creates a sunshine-bright cupcake that’s equally delicious.
