Paleo Chocolate Coconut Macaroons from Fry Sauce and Grits

One of my favorite recipes I learned during that time is these Paleo Chocolate Coconut Macaroons. They’re sweet, satisfying, and have a lovely touch of salt that keeps you coming back for more. When cravings hit—whether for donuts or ice cream—these little treats helped me stay on track. I hope you love them as much as I do.

Paleo Chocolate Coconut Macaroons

Yields10 Servings, 2 cookies per serving

Ingredients

  • 1 cup coconut flakes, unsweetened
  • 2 Tbsp cocoa powder
  • ⅓ cup walnuts, finely chopped
  • ⅓ cup dates, finely chopped
  • 2 Tbsp agave nectar or honey
  • ½ tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 Tbsp protein powder
  • ¼ tsp salt
  • ½ cup coconut oil

Instructions

  • In a medium bowl, toss the coconut flakes with the cocoa powder until the coconut is evenly coated.
  • Place the walnuts and dates in a food processor and pulse until finely chopped and sticky.
  • Add the coconut and cocoa mixture, agave or honey, cinnamon, vanilla, protein powder, salt, and coconut oil to the processor. Blend until the mixture holds together when pressed.
  • Form the batter into 1 tablespoon balls by hand. Freeze for two hours. Two balls equal one serving.
