If you love dark chocolate, these are for you. I didn’t always prefer dark chocolate, but now I’ll take chocolate any way I can get it. Dark cocoa has a deep, luscious flavor that’s irresistible, and when paired with cool peppermint it’s a perfect combo. That’s how these Peppermint Patty Mini Cookie Sandwiches were born.
Soft, chewy dark chocolate cookies studded with mini chocolate chips are sandwiched around a YORK MINI. The sandwiches are assembled while the cookies are still warm so the candy melts slightly and everything fuses together into a gooey, minty bite.

Chocolate and peppermint feel refreshing and indulgent at the same time. These little cookie sandwiches are the perfect mini dessert—cute, satisfying, and easy to share.

Peppermint Patty Mini Cookie Sandwiches
Ingredients
- ½ cup (113 g) unsalted butter, room temperature
- ¼ cup (50 g) plus 2 Tbsp light brown sugar, gently packed
- ¼ cup (50 g) plus 2 Tbsp granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 ¼ cup (150 g) all-purpose flour (stir, spoon & level)
- 3 Tbsp Hershey’s Special Dark Cocoa Powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup (170 g) mini semi-sweet chocolate chips
- 8 oz (227 g) package YORK MINIS (about 40 candies)
Instructions
- Preheat oven to 350°F (175°C).
- In the bowl of a stand mixer, cream together the butter and both sugars until light and fluffy. Add vanilla and egg and mix until smooth, scraping the bowl as needed.
- In a separate bowl, sift together the flour, cocoa, baking soda, and salt. Gradually add the dry mixture to the butter mixture until combined. Fold in the mini chocolate chips.
- Line a baking sheet with parchment paper. Drop rounded 1-teaspoon portions of dough onto the tray about 2 inches apart.
- Bake 7 minutes or until the cookies are puffed and just set.
- Let cookies cool on the baking sheet 1–2 minutes, then sandwich a YORK MINI between two warm cookies. Place each sandwich on a wire rack to finish cooling. Gently press so the melting chocolate helps the cookies adhere to the peppermint patty. Repeat with remaining cookies. Enjoy!
