Ingredients
For the Crust:
- 2 cups (290 g) gingersnap cookie crumbs, (about 35-40 cookies)
- 2 Tbsp granulated sugar
- 6 Tbsp (85 g) butter, melted
For the Filling:
- 16 oz (452 g) cream cheese, (two 8oz bars) room temperature
- 1 cup (200 g) granulated sugar
- 1 Tbsp all-purpose flour
- pinch of salt
- 1 tsp vanilla extract
- 2 large eggs, room temperature
- ½ cup + 2 Tbsp (153 g) pumpkin puree, (not pumpkin pie filling)
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground ginger
- ⅛ tsp ground cloves
Instructions
For the Crust:

Preheat oven to 350°F. Line the bottom of an 11×7-inch baking dish with parchment paper that overhangs the edges.

Pulse gingersnap cookies in a food processor until fine crumbs form. Add sugar and melted butter, then pulse until the crumbs are evenly coated. Press the mixture into the prepared pan in an even layer.

Bake the crust 10 minutes, then transfer to a wire rack to cool completely.
For the Filling:

Lower oven temperature to 325°F.

Beat cream cheese and sugar with an electric mixer until smooth and fluffy. Mix in flour, a pinch of salt, and vanilla. Add eggs one at a time, mixing until just combined. Set aside one cup of this mixture for the pumpkin layer.

Whisk pumpkin puree with cinnamon, nutmeg, ginger, and cloves. Stir the reserved cup of cream cheese mixture into the pumpkin until fully combined.

Pour the plain cheesecake mixture over the cooled crust. Spoon dollops of the pumpkin mixture evenly over the top, then use a skewer or toothpick to swirl them into a marbled pattern.

Bake at 325°F for 45–50 minutes, until the cheesecake is set. Cool completely on a wire rack.

Refrigerate until chilled, about 2–3 hours. Lift the cheesecake from the pan using the parchment overhang, slice into bars, and serve.
