If you loved my last burger posts, you’re in for another winner. These Queso Burgers pack big flavor with minimal effort. If you missed previous recipes, I’ve shared Mexican Burgers with taco-seasoned patties, cheddar, guacamole, and pico de gallo, plus favorites like an Italian Caprese Burger with garlic basil aioli and lighter Thai turkey burgers with peanut sauce. Toss out the same-old ketchup-and-mustard routine and try something new for your next barbecue.

These burgers are simple and full of flavor: a seasoned beef patty topped with a creamy Ro*Tel-style queso. The warm, spicy cheese dip transforms an ordinary burger into a messy, delicious experience—so have napkins handy and dig in.

Queso Burgers
Ingredients
- 1 lb lean ground beef
- 1 tsp minced garlic
- 1 tsp Montreal steak seasoning
- 10 oz can Ro*Tel Original diced tomatoes & green chiles undrained
- 16 oz package 2% Velveeta cheese cut into cubes
Instructions
-
In a bowl, combine the ground beef, minced garlic, and Montreal steak seasoning. Divide into four portions and shape into patties. Press a shallow dimple into the center of each patty so they cook evenly and retain their shape.
-
In a saucepan over medium heat, combine the cubed Velveeta and the undrained Ro*Tel. Stir occasionally until the cheese melts and the mixture is smooth and hot. Keep warm on low heat, stirring from time to time to prevent sticking.
-
Preheat your grill. Cook the burgers about 3 to 4 minutes per side, or until they reach your desired doneness. If you like, sprinkle a little extra Montreal seasoning on the patties while they cook.
-
Toast buns, place each burger on a bun, generously spoon the warm queso over the patties, add lettuce or your preferred toppings, and serve immediately.
