I’m fully in Valentine’s mode, so expect red, pink, and fruity sweets over the next couple of weeks. Today’s recipe is wonderfully simple: cake mix and a waffle iron make quick work of these festive waffles.

Simple doesn’t mean plain. These red velvet waffles are elegant and flavorful, finished with a cream cheese drizzle and fresh berries for a bright fruity note. They’re perfect for a Valentine’s breakfast in bed or a dessert when you want cake-like indulgence without baking a full cake.
My kids were thrilled to have cake waffles for breakfast — and honestly, who wouldn’t be? If you make these for the kids (or just for yourself), they’ll be a hit.

Red Velvet Waffles with Cream Cheese Icing Drizzle

Ingredients
- 15.25 oz (432 g) box Red Velvet Cake Mix, plus ingredients listed on the box
- 6 oz (170 g) cream cheese, softened
- 1 cup (120 g) powdered sugar
- 1 tsp vanilla extract
- 2 Tbsp milk, or more to reach desired drizzle consistency
- Mixed fresh or frozen berries, for topping

Preheat your waffle iron according to the manufacturer’s instructions.

Prepare the red velvet cake mix following the directions on the box. Spray the waffle iron with nonstick spray. Pour batter onto the hot iron — about ½ cup for a standard waffle iron — and spread gently; the batter will be thick. Avoid overfilling and cook as directed by your waffle maker.

For the cream cheese drizzle, beat together the softened cream cheese, powdered sugar, and vanilla until smooth. Whisk in milk one tablespoon at a time until you reach the desired consistency for drizzling.

Top each waffle with mixed berries and drizzle the cream cheese icing over the top. Serve warm.
Notes
Adjust the milk in the drizzle to make it thinner for a light drizzle or thicker for a more substantial icing. Use fresh berries when possible for brightness, or thaw frozen berries and drain excess liquid before topping.
