Ingredients

Crust

  • 15 regular Oreo cookies
  • 3 Tablespoons (42 g) unsalted butter, melted

Cheesecake Filling

  • 16 oz (452 g) cream cheese, softened to room temperature
  • 2 Tablespoons sour cream
  • ¾ cup (90 g) granulated sugar
  • ¼ cup (20 g) cocoa powder
  • 1 teaspoon vanilla extract
  • 2 Tablespoons red food coloring
  • 2 large eggs

Instructions

 

  1. Preheat oven to 350 degrees Fahrenheit (175°C). Line two 12-count muffin pans with a total of 16 paper liners and set aside.
  2. To prepare the crust, add the whole Oreos (including the cream filling) to a blender or food processor. Process until you have very fine crumbs. In a separate medium-sized bowl, combine the cookie crumbs and the melted butter. Stir well until the butter is fully incorporated and the mixture resembles wet sand.
  3. Evenly distribute the Oreo crust mixture among the 16 prepared muffin liners, using about one tablespoon per liner. Press the mixture down firmly into the bottom of each liner using your fingers or the back of a spoon. Bake for 5 minutes, then remove from the oven and let cool slightly while you prepare the filling.
  4. For the cheesecake filling, in a large mixing bowl using a handheld mixer or a stand mixer fitted with a paddle attachment, beat the softened cream cheese on medium speed until it is completely smooth and creamy, with no lumps. Add in the sour cream and granulated sugar, and mix until just well combined and smooth. Next, add the cocoa powder, vanilla extract, and red food coloring.
