Why This Raspberry Shortcake Sheet Cake Will Be Your New Favorite

After just one bite, you’ll understand why this Raspberry Shortcake Sheet Cake is an instant classic. The harmony of textures and flavors is truly exceptional. We start with a wonderfully light and fluffy white cake, providing the perfect canvas for the stars of the show: the creamy frosting and the fruity glaze. Unlike heavier cakes, this sheet cake’s thin, tender layer ensures that each forkful offers a delightful balance, preventing it from being overly rich or dense. It’s the kind of dessert that tempts you back for just one more slice, and then another! Its effortless elegance makes it suitable for celebrations both grand and intimate, promising to bring smiles to every face.

Indeed, I found myself indulging in multiple slices the day I first baked this recipe – a testament to its irresistible charm. It’s not just a dessert; it’s a delightful experience that creates happy memories. The bright, tangy raspberries beautifully cut through the sweetness of the cake and frosting, creating a refreshing contrast that keeps your palate engaged. You’ll be amazed at how quickly this cake disappears, making it an ideal choice for gatherings where you need a dessert that truly satisfies a crowd.

The Perfect Harmony: Cake, Cream, and Glaze

What truly sets this Raspberry Shortcake Sheet Cake apart is the exquisite interplay between its three main components. The foundation is a remarkably light and airy white cake, baked to a perfect golden hue. This delicate base is sturdy enough to hold its toppings yet remains incredibly moist and tender. Layered on top is a luscious whipped cream cheese frosting, which is both rich and tangy, offering a wonderful counterpoint to the sweet cake. It’s whipped to perfection, making it incredibly smooth and spreadable, creating a cloud-like texture that melts in your mouth.

Finally, the cake is generously adorned with a glistening fresh raspberry glaze. This ruby-red topping not only adds a burst of vibrant color but also a fresh, fruity zing that elevates the entire dessert. The glaze is thick enough to sit beautifully atop the frosting, yet still has a slight translucence that allows the creamy layer beneath to peek through. This thoughtful construction ensures that every single bite delivers a symphony of flavors and textures – the soft cake, the creamy frosting, and the bright, fruity glaze – creating a truly unforgettable dessert experience.

Danish Dessert: Your Secret Shortcut to a Stunning Glaze

One of the brilliant secrets behind this cake’s effortlessly beautiful and delicious raspberry glaze is the use of Danish Dessert. If you haven’t encountered it before, it’s a fantastic pantry staple that simplifies dessert making. Essentially, Danish Dessert is a fruit glaze mix, typically found in the baking aisle alongside Jell-O and other gelatin desserts at your local grocery store. It’s incredibly easy to use: simply combine the mix with water and heat it on the stovetop until it thickens into a glossy, clear glaze. The magic happens when you stir in fresh or frozen fruit, infusing the glaze with natural flavor and vibrant color.

The raspberry variety, specifically, provides that perfect balance of sweetness and tartness, and its gorgeous red hue makes this cake visually striking. Using Danish Dessert means you achieve a consistently smooth, perfectly set glaze every time, without the need for complex thickening agents or lengthy cooking. It’s a convenient shortcut that doesn’t compromise on taste or presentation, making your dessert look professionally crafted with minimal effort. You’ll love how easy it is to transport and serve directly from the sheet pan, cutting down on dish duty and making host duties a breeze. Beyond its practicality, the cake’s charming appearance, with its layers of white cake, creamy frosting, and ruby-red glaze, makes it beautiful enough for more special occasions.

Think of it as the ultimate Valentine’s Day dessert, where the red raspberries symbolize love and passion in a delightfully sweet form. It’s also perfect for Mother’s Day brunch, Easter celebrations, summer picnics, or even a delightful birthday cake – I’m already planning to make it for my own birthday in July! Expert Tips for Baking Your Raspberry Shortcake Sheet Cake

Achieving a picture-perfect and delicious Raspberry Shortcake Sheet Cake is straightforward with these helpful tips:

  • Don’t Overbake the Cake: Sheet cakes, especially those from a mix, can dry out quickly. Keep a close eye on it during the last few minutes of baking. The toothpick test is your best friend – remove the cake from the oven as soon as it comes out clean to ensure a moist, tender crumb.
  • Ensure Softened Ingredients for Frosting: For the smoothest, lump-free whipped cream cheese frosting, make sure both your cream cheese and butter are at room temperature. This allows them to cream together beautifully, creating a light and airy texture without any unwanted lumps.
  • Cool the Glaze Properly: After preparing the Danish Dessert glaze, it’s crucial to let it cool completely before spreading it over the cream cheese frosting. If the glaze is warm, it will melt the frosting and create a messy result. Using frozen raspberries helps speed up this cooling process significantly.
  • Gentle Spreading Technique: When spreading the cream cheese frosting over the cake, use an offset spatula and apply gentle, even pressure. Keeping the tip of the spatula down in the frosting helps prevent it from digging into the cake and pulling up crumbs, ensuring a smooth, clean layer.
  • Chill for Optimal Setting: The final chill time in the refrigerator is essential for this cake. It allows both the frosting and especially the raspberry glaze to set up properly. While two hours is the minimum, an overnight chill will give you the cleanest slices and the best firm glaze, as seen in beautifully styled dessert photos.

Ingredients

For the Cake:

  • 15.25 oz (432 g) box white cake mix
  • 1 cup (237 ml) water
  • ½ cup (118 ml) oil (canola or vegetable)
  • 3 large eggs

For the Whipped Cream Cheese Frosting:

  • 8 oz (226 g) block cream cheese, softened
  • 4 Tbsp (57 g) unsalted butter, softened
  • ½ cup (60 g) powdered sugar
  • 8 oz (226 g) tub Cool Whip* (whipped topping), thawed

For the Raspberry Glaze:

  • 4.75 oz (134 g) box Raspberry Danish Dessert (refer to photo in post for reference; typically found in the Jell-O/gelatin dessert aisle)
  • 1 ¾ cup (414 ml) cold water
  • 12 oz (340 g) frozen raspberries (fresh raspberries can also be used; approximately 2½ to 3 cups)

Equipment

  • Silicone Spatula Set
  • Nylon Whisk
  • 6-Quart Steel Mixing Bowl
  • Aluminum Half Sheet Tray (13x18x1-inch)
  • Wilton 3-Piece Icing Spatula Set

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare the white cake batter according to the directions provided on your cake mix box, using the specified amounts for water, oil, and eggs. Lightly grease a 13x18x1-inch half sheet pan. Pour the prepared cake batter evenly into the greased pan.
  2. Bake the cake for 12 to 15 minutes. To check for doneness, insert a toothpick into the center of the cake; if it comes out clean, the cake is ready. Remove the cake from the oven and allow it to cool completely on a wire rack before proceeding to the next step.
  3. While the cake is cooling, prepare the whipped cream cheese frosting. In a medium mixing bowl, use a hand mixer to beat the softened cream cheese and softened butter together until the mixture is light, fluffy, and perfectly smooth without any lumps. Gradually add the powdered sugar, beating until it is fully incorporated and the frosting is smooth. Finally, gently fold in the thawed Cool Whip until the frosting is evenly combined and has an airy consistency. Set this frosting aside.
  4. Next, prepare the raspberry glaze. In a small saucepan, whisk together the Raspberry Danish Dessert mix and 1¾ cups of cold water until smooth. Place the saucepan over medium heat and cook, whisking continuously, until the mixture comes to a boil and visibly thickens. Immediately remove the saucepan from the heat and stir in the frozen (or fresh) raspberries. The frozen berries will help to cool the glaze relatively quickly. Allow the glaze to cool completely. If using fresh raspberries, you might need to refrigerate the saucepan (on a hot pad) to speed up cooling, ensuring the glaze is cool enough but still spreadable, not fully set, before application.
  5. Once the cake is thoroughly cooled, spoon dollops of the prepared whipped cream cheese frosting over the cake. Using an offset spatula, carefully and evenly spread the frosting across the entire surface of the cake. To prevent pulling up cake crumbs, keep the tip of your offset spatula gently embedded in the frosting as you spread.
  6. Finally, when the raspberry glaze has cooled to a spreadable consistency, gently pour and spread it over the cream cheese layer, ensuring the entire cake is covered. For the best results and for the glaze to set properly, refrigerate the cake for at least 2 hours. For a firmer, more stable glaze and easier slicing, an overnight chill is recommended. Enjoy your beautifully layered Raspberry Shortcake Sheet Cake!

Notes and Substitutions

Can’t find Raspberry Danish Dessert? Make this homemade Raspberry Topping:

  • 24 oz (680 g) raspberries (fresh or frozen; approximately 5 cups)
  • ¾ cup (150 g) granulated sugar, or adjust to your taste
  • 3 Tbsp cornstarch
  • 1 Tbsp fresh lemon juice
  • ¼ tsp almond extract, optional (adds a lovely subtle flavor)

Combine all ingredients (excluding the almond extract) in a saucepan. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil. Remove from heat, stir in the almond extract (if you’re using it), and let the topping cool completely before using it to adorn your cake.

Cool Whip Substitute:

If Cool Whip isn’t available or you prefer a homemade option, you can easily make a Stabilized Whipped Cream. Alternatively, you can use a double batch of my Whipped Cream Cheese Frosting for an even richer, creamier topping.
