After years of thinking traditional buttercream was too sweet, I settled on a ratio of butter, powdered sugar, vanilla, and cream or milk that produces a classic buttercream I actually enjoy. The chocolate version below is an easy variation using cocoa powder added to the base vanilla recipe.

This recipe transforms a basic vanilla buttercream into a chocolate version by adding cocoa powder and adjusting the sweetness and liquid for the right texture.

To make this chocolate buttercream frosting, you will need:

  • Softened Butter – Use salted or unsalted according to preference. If using unsalted butter, add 1/8–1/4 tsp salt to taste.
  • Powdered Sugar – Also called confectioners’ sugar.
  • Cocoa Powder – Dutch-processed or natural cocoa both work; choose your favorite.
  • Vanilla – Pure vanilla extract adds depth.
  • Heavy Cream or Milk – Heavy cream yields a slightly thicker, creamier frosting; whole milk works fine too. Add liquid slowly to reach the desired consistency.
  • Note: If using heavy cream, add it at low to medium mixer speed to prevent over-whipping and incorporating too much air.

How much frosting will I need?

This recipe yields about 3 cups of frosting. That is typically enough to cover a 9×13-inch sheet cake or a two-layer 8-inch round cake. If spreading by knife or spatula, you can frost roughly 24 cupcakes. For piping swirls, plan on about 12–18 cupcakes depending on swirl size.

Ingredients

  • 1 cup (226 g) butter, (2 sticks) softened to room temperature
  • ¼ tsp salt*
  • 3-4 cups (360-480 g) powdered sugar
  • ½ cup (40 g) cocoa powder
  • 2 tsp vanilla extract
  • 3-4 Tbsp heavy cream, (or milk**)

  • Electric hand mixer
  • Mixing bowl and spatula

Instructions

 

  • Beat the softened butter and salt with an electric mixer until creamy.
  • Whisk or sift the powdered sugar and cocoa powder together to remove lumps. Add the mixture to the butter 1 cup at a time, mixing fully between additions until incorporated.
  • Add vanilla, then add heavy cream or milk 1 tablespoon at a time. Mix at low speed until you reach the desired consistency. If using milk, you can mix at a slightly higher speed.
  • Spread or pipe the frosting onto cakes, cupcakes, or cookies.

Notes

YIELD: About 3 cups of frosting—enough for a 13×9-inch sheet cake, a two-layer 8-inch cake, or 12–24 cupcakes depending on application.

*If using salted butter, adjust or omit added salt to taste.

**Whole milk or half-and-half can substitute for heavy cream. Add slowly to avoid making the frosting too thin.

Use the smaller amounts of powdered sugar and cream for a less sweet, slightly lighter frosting.
