Why This Mongolian Beef & Pineapple Recipe Stands Out

The moment I discovered this Mongolian Beef & Pineapple recipe, I knew I had to try it. Typically, my dinner rotations lean heavily on ground beef or chicken, so preparing a slow-cooked flank steak felt like a special occasion. And what a treat it was! The result is incredibly flavorful and unbelievably tender. It’s a fantastic way to introduce variety into your weekly meal plan, offering a fresh take on classic Asian-inspired dining.

The Secret to Irresistibly Tender Beef

One of the true highlights of this Slow Cooker Mongolian Beef & Pineapple is the remarkable tenderness of the meat. Flank steak, when prepared correctly, becomes melt-in-your-mouth soft. The secret lies in cutting it thinly against the grain, which breaks down the muscle fibers, and then letting the slow cooker work its magic. The low and slow cooking process ensures that every piece of beef absorbs the rich, aromatic sauce, resulting in a succulent texture that’s simply unparalleled. Additionally, a quick sear before slow cooking locks in extra flavor and creates a beautiful crust.

A Symphony of Flavors: Sweet, Spicy, and Savory

The flavor profile of this dish is truly spectacular. It strikes a harmonious balance between a subtle heat, a delightful sweetness, and a profound savory depth. The combination of low-sodium soy sauce, beef broth, brown sugar, hoisin, and Thai sweet red chili sauce creates a complex base that’s both robust and nuanced. Fresh garlic and ginger infuse the sauce with an aromatic warmth, while red pepper chili flakes allow you to customize the spice level to your preference. And the pineapple? It adds a bright, tangy burst that cuts through the richness, elevating the entire dish to another level of deliciousness.

Tips for Crafting the Perfect Slow Cooker Mongolian Beef & Pineapple

Achieving restaurant-quality Mongolian beef at home is surprisingly simple with these tips:

  1. Cut Against the Grain: This is crucial for tender flank steak. Slicing the beef thinly across the grain ensures it breaks down beautifully during slow cooking, preventing a chewy texture.
  2. Don’t Skip the Sear: While optional for some slow cooker recipes, quickly searing the beef before adding it to the slow cooker caramelizes the exterior, adding an extra layer of depth and flavor that you wouldn’t get otherwise.
  3. Adjust the Spice: The red pepper chili flakes are your control for heat. Start with ¼ teaspoon for a mild warmth and increase to ½ teaspoon or more if you prefer a spicier kick.
  4. Pineapple Power: Using both pineapple chunks and a little reserved pineapple juice adds a natural sweetness and tang that truly complements the savory beef. Don’t drain all the juice!
  5. Thickening the Sauce: The cornstarch coating on the beef, combined with the cooking time, naturally thickens the sauce to a luscious consistency. If you desire an even thicker sauce, you can create a slurry with a teaspoon of cornstarch mixed with a tablespoon of cold water and whisk it into the sauce during the last 30 minutes of cooking.
  6. Add Veggies for Color and Crunch: Matchstick carrots add a touch of sweetness and vibrant color. Feel free to experiment with other quick-cooking vegetables like bell peppers or snap peas, adding them in the last hour to prevent them from becoming too soft.

Serving Suggestions for a Complete Meal

This Slow Cooker Mongolian Beef & Pineapple is incredibly versatile and pairs wonderfully with a variety of sides. Serve it generously over steaming hot white or brown rice to soak up all the delicious sauce. For an extra touch of freshness and flavor, garnish with thinly sliced green onions and a sprinkle of sesame seeds. You could also serve it with a side of steamed broccoli or stir-fried noodles for a more complete and satisfying meal.

Yields: 4 to 6 servings

Ingredients

  • ⅓ cup cornstarch
  • 1 tsp baking soda (optional, for extra tender beef)
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tsp cooking oil
  • 1 ½ lb flank steak, cut across the grain into thin strips
  • ½ cup low sodium soy sauce
  • ⅔ cup low sodium beef broth
  • ⅓ cup brown sugar, packed
  • 2 Tbsp hoisin sauce
  • 1 Tbsp Thai sweet red chili sauce
  • ¼ to ½ tsp red pepper chili flakes (to desired spice level)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • ½ cup matchstick carrots
  • 1 cup pineapple chunks/tidbits
  • ¼ cup (+) pineapple juice (reserved from canned pineapple)
  • Cooked rice, for serving
  • 2 green onions, sliced thinly, for garnish (optional)
  • Sesame seeds, for garnish (optional)

Instructions

  1. In a large zip-top bag, combine the cornstarch, baking soda (if using), salt, and black pepper. Add the thinly sliced flank steak to the bag and shake until the beef strips are thoroughly coated.
  2. Heat the cooking oil in a large skillet over medium-high heat. Sear the coated beef strips for about 1 to 2 minutes per side until lightly browned. Transfer the seared beef to your slow cooker.
  3. In a medium bowl, whisk together the soy sauce, beef broth, packed brown sugar, hoisin sauce, Thai sweet red chili sauce, red pepper chili flakes, minced garlic, and minced ginger until the sugar is dissolved and the mixture is well combined. Pour this sauce over the beef in the slow cooker. Cover with the lid.
  4. Cook on low for 3 to 4 hours, or until the beef is tender.
  5. Approximately 30 minutes before you plan to serve, add the matchstick carrots, pineapple chunks/tidbits, and the reserved pineapple juice to the slow cooker. If you prefer a thinner sauce, you can add a little extra pineapple juice or beef broth at this stage.
  6. Cover the slow cooker again, turn the heat setting to high, and continue to cook for an additional 30 minutes to allow the flavors to meld and the carrots to soften slightly.
  7. Serve the Slow Cooker Mongolian Beef & Pineapple hot over cooked rice. Garnish with fresh, thinly sliced green onions and a sprinkle of sesame seeds, if desired, for added freshness and crunch.
