After sharing my Foolproof Flaky Biscuits, readers asked for a gravy to serve with them. Since my husband’s favorite besides Eggs Benedict is biscuits and gravy, I decided to make a batch and share the recipe here.

This gravy is built from crumbled spicy sausage and plenty of cracked black pepper folded into a classic white sauce. The whole meal — biscuits and gravy — comes together in about 30 minutes.

We often enjoy breakfast for dinner, and this was a huge hit with my family. My son especially loved it, which is always a bonus when dinner gets high marks at the table.

- 1 recipe Foolproof Flaky Biscuits
- 1 lb hot sausage
- ⅓ cup all-purpose flour
- 3 cups milk (add up to 1 cup more milk if a thinner gravy is desired)
- ½ tsp sea salt
- 1 tsp fresh cracked black pepper

Prepare the Foolproof Flaky Biscuits and, while they bake, make the gravy.

In a large saucepan, brown the hot sausage, breaking it into small pieces. Do not drain the rendered fat; it will help flavor the gravy.

Sprinkle the flour over the cooked sausage and stir so the fat absorbs the flour. Let the mixture cook for about 1 minute to remove the raw flour taste.

Slowly whisk in the milk, a little at a time, and continue stirring over medium heat until the gravy thickens, roughly 10 minutes. If you prefer thinner gravy, add up to 1 cup more milk.

Season with sea salt and fresh cracked black pepper, tasting and adjusting to preference.

To serve, split the warm biscuits and ladle the sausage gravy over the top. Serve immediately and enjoy.
