I love creating holiday-themed treats, even when I’m not particularly into the holiday itself. Valentine’s Day is a nice reminder to celebrate the people we love — for my family it’s more about spending time together than elaborate decorations or gifts. That said, I do enjoy making simple, festive recipes that everyone can enjoy.

The Sparkling Strawberry Float is bright, festive and very easy to prepare. My kids loved it. It’s essentially a homemade strawberry soda made from fresh or frozen strawberries, finished with a scoop of vanilla ice cream. The combination of fizzy strawberry puree and creamy vanilla is delightful — it works as a drink or a dessert. Quick to make and delicious to eat. Enjoy!

Ingredients

  • 4 cups frozen strawberries
  • ½ cup granulated sugar (more or less depending on the tartness of the strawberries)
  • ¼ cup lime juice
  • 2 ¾ cups club soda, divided
  • vanilla bean ice cream

Instructions

 

  • Place the strawberries, sugar, lime juice and 2 cups of club soda in a blender. Blend until smooth.
  • Gently stir in the remaining club soda to preserve the fizz.
  • Divide the mixture among glasses, add a scoop of vanilla bean ice cream to each, and top with an extra splash of club soda if you like.

Notes

No special equipment is needed beyond a blender. Use fresh strawberries when in season, or frozen for convenience. Adjust sugar to taste based on how sweet or tart your berries are.
