Spicy Sweet Mango Meatballs

Some nights call for an easy, no-fuss dinner. This recipe was assembled on a whim from ingredients I had on hand, and it quickly became a favorite for busy evenings.

The meatballs turned out moist with a delightful balance of sweet and tangy flavors. They’re simple to prepare and make a great “semi-homemade” meal when you want something satisfying without a lot of effort.

Ingredients

Meatballs:

  • 1 lb ground beef
  • ¼ cup chopped onion
  • ½ cup chopped green onions
  • ⅓ cup Italian breadcrumbs
  • 2 Tbsp milk
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 1 medium egg
  • ½ cup Pineapple or apricot jelly

Glaze:

  • ⅓–½ bottle KC Masterpiece Spicy Mango Marinade
  • ½ cup Pineapple or apricot jelly

Instructions

 

  • MEATBALLS: In a bowl combine the ground beef, chopped onion, green onions, breadcrumbs, milk, salt, pepper, egg, and the jelly. Mix gently until combined. Shape into 1-inch balls (about 24–30) and place on a baking sheet. Bake at 400°F for about 15 minutes, or until cooked through.
  • GLAZE: While the meatballs cook, combine the KC Masterpiece Spicy Mango Marinade and the pineapple or apricot jelly in a small saucepan. Warm and simmer gently until the jelly melts and the sauce is smooth.
  • When meatballs are done, add them to the glaze and simmer 5–10 minutes, stirring occasionally, until they’re evenly coated and the sauce thickens.
  • Serve over cooked rice and garnish with extra chopped green onions.
  • Optional: After browning or baking, place meatballs and sauce in a crockpot and keep on low for 1–2 hours to meld flavors and keep warm.
