As the days grow longer and the sun shines brighter, peak strawberry season from April to June ignites a craving for all things strawberry. From pies to tarts, smoothies to shortcakes, there’s an undeniable joy in baking with fresh, seasonal berries. This year, I’ve channeled that inspiration into creating a dessert that marries my favorite classic sugar cookie recipe with the vibrant taste of summer strawberries. The result? These irresistible Strawberry Sugar Cookie Bars – a convenient, flavor-packed alternative to individual cookies, perfect for sharing and savoring.

Why You’ll Love These Strawberry Sugar Cookie Bars

Forget the fuss and time commitment often associated with traditional sugar cookies. While rolling, cutting, and frosting individual cookies can be a delightful project, it’s not always practical for busy schedules or when you need to feed a large group. That’s where sugar cookie bars shine! This recipe streamlines the entire process, allowing you to enjoy all the nostalgic charm of sugar cookies with significantly less effort. Simply press the dough into a pan, bake, and then slather on a thick layer of dreamy strawberry frosting. The result is a dessert that’s not only quicker to prepare but also delivers a uniquely satisfying texture: a thick, soft, and wonderfully chewy cookie base that stays moist for days, perfectly complemented by a naturally fruity frosting.

These bars are more than just easy; they are a celebration of strawberry season, bringing a burst of fresh flavor to any occasion. Whether you’re hosting a backyard barbecue, planning a picnic, attending a potluck, or simply looking for a sweet treat to brighten your day, these Strawberry Sugar Cookie Bars are guaranteed to be a hit. They are visually appealing, intensely flavorful, and undeniably crowd-pleasing, making them an ideal addition to your spring and summer dessert repertoire.

Crafting the Perfect Natural Strawberry Frosting

Achieving a truly delicious, fruit-forward strawberry frosting without relying on artificial flavors or colors can be a bit of a culinary dance. The primary challenge often lies with the water content in fresh strawberries. Pureeing fresh fruit can introduce too much liquid, leading to a runny, unstable frosting that struggles to hold its shape or be piped beautifully. Many bakers attempt to reduce fresh strawberry purée, but this can be time-consuming and still doesn’t always guarantee the desired thick consistency.

While some recipes might call for freeze-dried strawberries, which offer concentrated flavor without excess moisture, they can sometimes be difficult to find or more expensive. For this recipe, I lean on a reliable secret weapon that consistently delivers a vibrant, stable, and incredibly flavorful strawberry frosting: natural strawberry preserves.

Natural strawberry preserves are a game-changer. They provide an intense, authentic strawberry taste and a thick, smooth consistency that is perfect for frosting. When selecting preserves, always check the label for the shortest ingredient list possible. Brands like Smucker’s Natural Strawberry Fruit Spread are excellent choices, often containing just strawberries, sugar, fruit pectin, and citric acid. This simplicity ensures a pure strawberry flavor without unnecessary additives.

If you’re truly dedicated to using fresh fruit from scratch, a homemade option like Low-Sugar Strawberry Freezer Jam can also work wonderfully, provided it’s smooth and thick. The key, regardless of whether you choose preserves or jam, is a smooth texture without large fruit chunks, ensuring your frosting is creamy and spreadable. This very frosting has proven its versatility on my Favorite Strawberry Cake and Strawberry Lime Cupcakes, proving it’s not only delicious but also holds up beautifully for piping – a feat challenging to achieve with fresh fruit purées. It’s truly my go-to strawberry frosting recipe, and it absolutely shines on these sugar cookie bars.

The Irresistible Sugar Cookie Bar Base

Making traditional sugar cookies involves several steps that, while rewarding, can be quite time-consuming: chilling the dough, rolling it out, meticulously cutting shapes, baking in batches, and then individually frosting each cookie. This can turn a simple dessert into quite the undertaking. Our Strawberry Sugar Cookie Bars eliminate much of this labor-intensive process, making it an incredibly quick and easy dessert to whip up.

The secret to these bars lies in a unique sugar cookie recipe that uses somewhat unconventional ingredients to achieve an unparalleled texture. Unlike many sugar cookie recipes that can result in a dry or cakey cookie, this dough incorporates both powdered sugar and oil alongside butter and granulated sugar. The powdered sugar contributes to an incredibly tender crumb and helps maintain moisture, while the oil further enhances this tenderness and ensures a soft, melt-in-your-mouth quality that prevents any hint of dryness. The combination creates a thick, wonderfully soft, deeply moist, and satisfyingly chewy sugar cookie bar that stands out from the rest. You won’t find anything cakey or crumbly here – just pure, buttery cookie perfection.

This favorite sugar cookie recipe provides the ideal foundation for these bars. The dough comes together easily and presses smoothly into the baking pan, eliminating the need for rolling pins and cookie cutters. Once baked, the edges turn a beautiful golden hue, while the center remains perfectly soft and light. This method ensures that every bite offers a consistent, delightful texture that’s truly addictive. It’s the kind of cookie base that perfectly supports the vibrant strawberry frosting without overpowering it, creating a harmonious balance of flavors and textures.

Tips for Baking Success

Creating these delightful Strawberry Sugar Cookie Bars is straightforward, but a few key tips can elevate your baking experience and ensure perfect results every time:

  • Room Temperature Ingredients: For both the cookie dough and the frosting, ensure your butter is at room temperature. This allows it to cream properly with the sugars, creating a smooth, emulsified base that traps air, resulting in a lighter texture for the cookie and a creamier frosting.
  • Measure Flour Correctly: For accurate results, use the “stir, spoon, and level” method for measuring flour. Stir the flour in its container, then spoon it lightly into your measuring cup, and finally, level off the top with a straight edge (like the back of a knife). Avoid scooping directly with the measuring cup, as this can pack too much flour and lead to dry bars.
  • Do Not Overbake: This is crucial for soft and moist sugar cookie bars. Bake until the edges are just barely golden and the center no longer looks wet, but not set hard. The bars will continue to cook slightly from residual heat after being removed from the oven. An overbaked cookie bar will lose its signature chewiness and become dry.
  • Cool Completely: Allow the cookie bars to cool entirely in the pan before attempting to frost them. Applying frosting to warm bars will cause it to melt and slide off, creating a messy situation. Using parchment paper to lift the cooled bars out of the pan makes frosting and cutting incredibly easy.
  • Smooth Preserves for Frosting: As mentioned, ensure your strawberry preserves are smooth and chunk-free. If your preserves have large fruit pieces, you can briefly blend them with an immersion blender or a regular blender until smooth before adding to the butter.

Variations and Serving Suggestions

These Strawberry Sugar Cookie Bars are fantastic as is, but don’t hesitate to get creative with variations to suit your taste or occasion:

  • Different Fruit Frostings: While strawberry is divine, you can easily swap out the preserves for other natural fruit flavors like raspberry, apricot, or even mixed berry to create different seasonal treats.
  • Citrus Zest: Add a teaspoon of lemon or orange zest to either the cookie dough or the frosting for a bright, aromatic lift that perfectly complements the strawberry flavor.
  • Garnishes Galore: Elevate the presentation with simple garnishes. Fresh strawberry slices, a sprinkle of colorful nonpareils or white sanding sugar, or a delicate drizzle of melted white chocolate can make these bars even more special.
  • Make it Mini: For smaller servings, bake the cookie dough in an 8×8 inch pan for thicker bars and adjust baking time, or even use a mini muffin tin for bite-sized cookie cups (adjusting cook time accordingly).

These bars are incredibly versatile for serving. They are the quintessential dessert for spring and summer festivities. Imagine them gracing the dessert table at a graduation party, a baby shower, a bridal brunch, or simply as a delightful after-dinner treat with your family. Their portability makes them ideal for picnics in the park, potlucks with friends, or school bake sales. You can cut them into small squares for a crowd or larger rectangles for a more substantial indulgence. No matter how you serve them, their bright flavor and appealing texture will make them disappear quickly!

Yields12 -24 bars

Ingredients

Cookie Dough:

  • ½ cup (113 g) butter, (1 stick) room temperature (salted or unsalted)
  • ¾ cup (150 g) granulated sugar
  • ⅓ cup (40 g) powdered sugar
  • ⅓ cup (80 ml) oil, (vegetable/canola)
  • 1 Tbsp water
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 ¾ cups (330 g) all-purpose flour, (stir, spoon, & level)
  • ¼ tsp baking soda
  • ¼ tsp cream of tartar
  • ½ tsp salt

Strawberry Frosting:

  • ¾ cup (150 g) butter, room temperature (salted or unsalted)
  • ¾ cup (228 g) natural strawberry preserves
  • 2 ½ – 3 cups (300-360 g) powdered sugar

Instructions

  1. Preheat oven to 350 degrees Fahrenheit (175°C). Line a 9×13-inch baking dish with parchment paper, leaving an overhang on the sides for easy lifting. Lightly grease any exposed sides of the pan with cooking spray. This parchment paper method makes removing, frosting, cutting, and serving the bars incredibly simple.
  2. In the bowl of a stand mixer fitted with the paddle attachment (or using an electric hand mixer in a large bowl), cream together the softened butter with the granulated sugar and powdered sugar until the mixture is light, fluffy, and smooth. This typically takes 2-3 minutes.
  3. Add the oil, water, large egg, and vanilla extract to the creamed butter mixture. Beat thoroughly until all the wet ingredients are well combined and smooth. Scrape down the sides of the bowl as needed to ensure everything is incorporated.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, cream of tartar, and salt. Gradually add the dry ingredients to the wet ingredients in the mixer bowl. Mix on low speed just until everything comes together and forms a cohesive dough. Be careful not to overmix, as this can develop the gluten too much and lead to tough bars. The dough will be slightly crumbly but should hold together when pressed.
  5. Evenly press the cookie dough into the prepared 9×13-inch baking pan. You can use your hands, a spatula, or the bottom of a measuring cup to ensure an clean, even layer across the entire pan.
  6. Bake in the preheated oven at 350°F (175°C) for 16-20 minutes. The bars are ready when the edges begin to turn a very light golden brown and the center no longer appears wet or glossy, but still feels soft to the touch. It’s crucial not to overbake, as this is key to maintaining their soft and moist texture. Remove the pan from the oven and immediately transfer it to a wire cooling rack to cool completely.
  7. TO MAKE STRAWBERRY FROSTING: While the cookie bars are cooling, prepare the frosting. In a large mixing bowl with an electric hand mixer (or stand mixer with paddle attachment), beat the room temperature butter until it’s incredibly smooth and creamy, about 2-3 minutes.
  8. Add the natural strawberry preserves and 1 cup of the powdered sugar to the beaten butter. Mix on low speed until combined, then increase to medium-high and beat until well blended and fluffy.
  9. Gradually add the remaining powdered sugar, ½ cup at a time, mixing well after each addition, until you reach your desired frosting consistency. You might not need all 3 cups, depending on how thick you prefer your frosting. The frosting should be smooth, spreadable, and hold its shape.
  10. Once the cookie bars are completely cool, use the parchment paper overhang to lift the entire slab of cookie bars out of the pan and place it on a cutting board or flat surface. Evenly spread the prepared strawberry frosting over the top of the cooled bars.
  11. Cut into 12 large bars or 24 smaller squares, depending on your serving preference. Serve immediately or refrigerate for best texture.

Notes

  • These bars taste best when refrigerated and eaten cold. This also helps the frosting set perfectly for cleaner cuts.
  • Storage: Store leftover Strawberry Sugar Cookie Bars in an airtight container in the refrigerator for up to 3-4 days. They can also be frozen for longer storage; wrap individual bars tightly in plastic wrap and then aluminum foil for up to 2-3 months. Thaw in the refrigerator before serving.
