These Coconut Cashews, inspired by Trader Joe’s, are made with coconut milk, coconut oil, sugar, and coconut flakes to create some incredibly delicious candied nuts!

Ingredients
- 3 cups cashew halves, (I used Planter’s Cashew Halves & Pieces for good results)
- 1 Tbsp coconut oil, melted
- ¼ cup lite coconut milk, (from the can, ensure it’s well-mixed)
- ½ cup granulated sugar
- ½ cup sweetened coconut flakes
Instructions
- Place the cashew halves in a large mixing bowl, ensuring they are evenly distributed.
- Melt the coconut oil until it’s liquid, then pour it over the cashews. Toss gently to coat.
- Open the can of coconut milk and whisk it thoroughly to combine the creamy and watery parts. Measure out ¼ cup and add it to the cashews. (You can save any leftover coconut milk for smoothies or cooking rice.)
- Add the granulated sugar to the nuts. Gently fold and mix the coconut-cashew mixture until all ingredients are well combined and the cashews are evenly coated.
