Ingredients
- 1 ½ cups all purpose flour
- ½ teaspoon salt
- 1 ½ teaspoons baking powder
- ½ teaspoon ginger
- ½ cup butter room temperature
- 1 cup light brown sugar firmly packed
- 1 egg
- 1 teaspoon vanilla
- ½ cup walnuts toasted and finely chopped
Instructions

In a medium bowl, whisk together the flour, salt, baking powder, and ginger. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment, or using a hand mixer, cream the butter and brown sugar until well combined. Remember that brown sugar dough won’t become as “light and fluffy” as dough made with granulated sugar.

Add the egg and vanilla extract to the creamed mixture and continue to beat until they are fully incorporated and the mixture is smooth.

Gently stir in the toasted and finely chopped walnuts until evenly distributed throughout the dough.

Divide the dough in half and place each half onto a separate sheet of parchment paper. Roll each portion into a log, approximately 2 inches in diameter. At this point, the dough will be quite soft. For perfectly round cookies (especially if you’re a perfectionist!), you can remove the logs from the refrigerator after about an hour and gently reshape or tighten them to create a perfect circle. Chill the dough logs overnight for best results.

When you are ready to bake, preheat your oven to 375°F (190°C). Prepare baking sheets by lining them with parchment paper.

Remove a dough log from the refrigerator and slice it into 1/8-inch thick rounds. Place the slices about 1 inch apart on the prepared baking sheets. Bake in the preheated oven for 7-10 minutes, or until the edges of the cookies are lightly set and golden, and the centers appear matte and no longer doughy.
