30-Minute Savory Meatballs with Rich Tomato Sauce

I have a 30-minute meal idea for you today. We make these meatballs a lot because they’re fast and incredibly versatile — you can change up the sauce to suit your mood. I call them Saucy Meatballs because they cook quickly and finish in a flavorful sauce. The meatballs themselves bake in about 13–15 minutes, and if you warm your sauce while they bake, the whole meal comes together in under 30 minutes. Use barbecue, teriyaki, marinara, or any glaze you prefer — these meatballs work great with all of them.

You can also make a large batch and freeze extras for later. Freeze the meatballs on a parchment-lined tray until firm, then transfer them to a zip-top freezer bag. Reheat to an internal temperature of 165˚F before serving. Enjoy!

Saucy Meatballs… in 30 minutes or less!

Ingredients

  • 1 lb ground beef
  • ¼ cup finely diced onion
  • ½ cup chopped green onions, optional
  • ⅓ cup Italian breadcrumbs
  • 2 Tbsp milk
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 1 large egg
  • 1 cup sauce, (BBQ, Teriyaki, Marinara, etc.)

Instructions

  • Combine all ingredients except the sauce in a bowl. Roll the mixture into 1½-inch meatballs (about 20–24). A #50 cookie scoop speeds this up. Arrange the meatballs on a foil-lined baking sheet sprayed with cooking spray. Bake at 425˚F for 13–15 minutes or until fully cooked.
  • While the meatballs bake, warm the sauce in a large saucepan over medium-low heat. Add the baked meatballs to the sauce and gently fold until they are coated and heated through. Serve however you like — as an appetizer, over rice or noodles, or with rolls.
