My husband says he likes these even more than traditional rice krispie treats — the Fruity Pebbles add bright color and a fun fruity crunch that pairs perfectly with the sweet marshmallow and creamy white chocolate topping.

Rainbow Krispie Treats

Created by
Amber Brady
Yields
24 squares

Ingredients

  • 4 Tbsp butter
  • 1 ¼ to 1 ½ (16 oz) bags marshmallows (depending on how chewy you like your krispie treats)
  • 6 cups Fruity Pebbles cereal
  • 12 oz white chocolate chips
  • 1 Tbsp coconut oil or shortening, for thinning
  • Rainbow sequins / celebration confetti / rainbow sprinkles

Instructions

  • Grease a 13×9-inch baking dish with extra butter or nonstick spray.
  • In a large nonstick pot, melt 4 Tbsp butter over low-medium heat. Add marshmallows and stir constantly until fully melted and smooth.
  • Remove from heat. Fold in the Fruity Pebbles cereal until the marshmallow is evenly distributed and the mixture is well coated.
  • Transfer the mixture to the prepared baking dish. Press evenly into the pan using a buttered measuring cup or parchment to avoid sticking and protect your hands.
  • Melt the white chocolate chips with the coconut oil in a microwave-safe bowl in 30-second bursts, stirring between each interval until smooth and pourable.
  • Spread the melted white chocolate over the top of the krispie treats and immediately sprinkle with rainbow confetti so it adheres while the chocolate is warm.
  • Allow the treats to set for at least 1 hour before cutting and serving. Chilling in the refrigerator speeds up the process.
