- ¾ cup (150 g) brown sugar, gently packed
- ½ cup (100 g) granulated sugar
- 2 large eggs

- 1 ½ cups (180 g) all-purpose flour, (stir, spoon, & level)
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- 3 cups (240 g) quick or old fashioned oats, (I used both – half of each)
Cream Filling:
- ¾ cup (150 g) unsalted butter, (12 Tbsp) softened
- 2 ½ cups (330 g) powdered sugar
- 1 tsp vanilla extract
- 1 Tbsp milk
Instructions
- Preheat oven to 350 degrees Fahrenheit. Line baking trays with parchment paper/silicone baking mats.
- In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugars until light and fluffy. Add the eggs and vanilla. Mix until combined.
