First, Make the Strawberry Sauce Topping
Make the strawberry sauce first so it has time to cool completely before assembling.

- Whisk granulated sugar and cornstarch in a medium saucepan.
- Add water, lemon juice, and diced strawberries; stir to combine.
- Cook over medium heat, stirring constantly, until the mixture boils and thickens into a syrup. Transfer to a heat-safe container and refrigerate until cool.
Next, Make the Vanilla Cupcakes
Preheat the oven to 350°F (375°F high altitude). Line muffin tins with liners.

- Sift together flour, baking powder, and salt; set aside.
- Whisk oil and granulated sugar in a large bowl until combined.
- Add eggs one at a time, mixing after each addition, then stir in vanilla.
- Add half the dry ingredients and mix until just combined.
- Stir in the buttermilk until combined, then add the remaining dry ingredients and mix gently. Do not overmix.

With cooled cupcakes, cooled strawberry sauce, and chilled frosting, assemble the cupcakes.

- Spread a thin layer of frosting over each cupcake as a mini crumb coat.

- 4 oz (113 g) brick cream cheese, cold
- ¾ cup (90 g) powdered sugar
- Pinch salt
- ½ tsp vanilla extract
- ¾ cup (178 ml) heavy cream, cold
