Hi everyone — Mallory from Chocolate With Grace here. Today I’m sharing a recipe that brightens even the dullest winter days: Lemon Berry Muffins. The bright citrus notes of lemon cut through winter’s gray and add a cheerful lift to your breakfast or brunch.

This winter has felt especially brown in my area — bare trees, dull grass and an overcast sky. We were teased with a blizzard forecast that had everyone stocking up, only to wake up to a dusting of snow. When the weather disappoints, baking is my go-to comfort. These muffins are quick to make and promise warm, citrusy comfort in under half an hour.

The recipe is forgiving and uses simple pantry ingredients. I used a frozen berry mix (raspberries, blueberries and blackberries) but fresh berries work just as well. Make them when you want something bright, tender, and bursting with berry flavor. Happy baking!

Ingredients

  • 1 ¾ cups (210 g) all-purpose flour, (stir, spoon & level)
  • ½ cup (100 g) granulated sugar
  • 2 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 beaten egg
  • ½ cup (118 ml) milk + 2 Tablespoons
  • 2 Tablespoons lemon juice
  • 1 Tablespoon lemon zest
  • ⅓ cup (80 ml) canola oil
  • 1 cup (140 g) berries, fresh or frozen (I used a frozen mix of raspberries, blackberries and blueberries)

Instructions

  • Preheat the oven to 400°F (200°C). In a large bowl, whisk together the flour, sugar, baking powder and salt. In a separate bowl, whisk the beaten egg with the milk, lemon juice, lemon zest and oil.
  • Gently fold the wet ingredients into the dry ingredients until just combined, then fold in the berries. Avoid overmixing to keep the muffins tender. Spoon the batter into lined muffin tins, filling each about two-thirds full.
  • Bake for 12–14 minutes, or until a toothpick inserted into the center comes out clean. Transfer to a wire rack to cool.
