When my husband and I were newly married, we relied on boxed dinners more often than I’d like to admit. They were convenient after long days of school and work, and one of our favorites was Zatarain’s Jambalaya. We hadn’t had it in years, and when my husband asked for jambalaya recently, I decided to make a fresh, homemade version.

Quick Sausage Jambalaya

After reviewing several recipes, I developed this quick sausage jambalaya and we loved the result. My husband even said it was better than the boxed mix. It has a pleasant kick and plenty of flavor, yet comes together just as fast as a convenience meal—only fresher. This recipe has officially replaced the boxed version in our house.

Side note: my dad is from Louisiana and he said this tasted pretty authentic, so I’ll take that as a compliment. It is a bit spicy for small children; a little ranch or sour cream tones it down nicely. Enjoy!

Ingredients

  • 13 oz pkg chicken sausage or kielbasa, cut into pieces
  • ½ small onion, chopped
  • 1 green pepper, chopped
  • 4 garlic cloves, minced
  • 1 ½ tsp paprika
  • 1 tsp salt
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp ground black pepper
  • ¼ tsp cayenne pepper
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • 14.5 oz can small diced tomatoes, whole and undrained
  • 1 cup chicken broth (or 1 cup water + 1 tsp bouillon)
  • 1 ½ cups Minute Rice (white or brown)
  • 1 Tbsp canola oil

Instructions

  • Heat 1 tablespoon of canola oil in a large skillet over medium-high heat. Add the sausage pieces and brown them, turning so they color evenly.
  • Add the chopped onion, green pepper, and minced garlic to the skillet. Sauté about 5 minutes, until the vegetables soften and the onion becomes translucent.
  • Stir in the paprika, salt, garlic powder, onion powder, black pepper, cayenne, oregano, and thyme. Cook about 30 seconds until the spices are fragrant.
  • Add the undrained diced tomatoes, chicken broth (or water + bouillon), and Minute Rice. Bring the mixture to a boil, then reduce heat, cover, and simmer 7–10 minutes or until the rice is tender and most of the liquid has been absorbed. Serve hot and enjoy.
