Biscuits and gravy is one of my husband’s favorite breakfasts, but for a long time I struggled to make tall, flaky biscuits worth repeating. I’ve since discovered that the secret to consistently flaky biscuits isn’t just the ingredients—technique matters just as much. Follow a few simple steps and you’ll get those beautiful buttery layers every time.

Picture a crisp exterior, peel-apart layers, and a tender, buttery center. These biscuits are best served warm—slathered with apple butter, jam, honey, or plain butter. Here’s how to ensure those flaky layers every time.

Cold butter is essential. When the cold butter melts in the oven, it creates pockets of steam that separate the dough into layers. Cut the butter into the flour until pieces are about the size of peas—don’t overdo it or break the pieces down too small.

After adding the cold buttermilk and bringing the dough together, turn it onto a lightly floured surface and gently roll it into a roughly 6×9-inch rectangle. Cut that rectangle into three equal thirds.

Here’s the important trick: stack the three thirds on top of each other, then roll the stacked dough out again to about 6×9 inches. Stacking and rolling creates distinct layers in the dough so the biscuits rise tall and flake apart.

Dip a 2¼- or 2½-inch biscuit cutter in flour and press straight down without twisting to cut 9 (maybe 10) biscuits. Place them on a silicone-lined baking sheet, keeping the cuts clean. Gently gather scraps and repeat the stacking technique to use all the dough, taking care not to overwork it or warm the butter with your hands.

If any biscuit edges stick down, gently stretch them upward before baking to encourage an even rise. The unbaked biscuits should be fairly thick—about 1¼ to 1½ inches—so you can already see butter pockets and layers before they go into the oven.

Bake at 450°F (232°C) for 10–12 minutes, or until golden on top and bottom. Serve warm for the best texture and flavor. Leftovers keep well in a zip-top bag for 3–4 days; I reheat single biscuits in the microwave for 10–12 seconds when I want one quickly.

- ½ cup (113 g) unsalted butter, cold, cut into tablespoons
- ¾ cup (177 ml) buttermilk, cold (or milk + 1 tsp lemon juice or vinegar, let sit 5 minutes)

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Cut in the cold butter with a pastry blender or forks until the pieces are about pea-sized.

Turn the dough onto a lightly floured surface and roll into a 6×9-inch rectangle. Cut the rectangle into three equal thirds.
