This recipe is an easy three-ingredient twist on classic baked apples. Core the apples and stuff them with granola mixed with a bit of peanut butter. The result tastes indulgent but is nourishing enough for breakfast or an after-school snack. My preferred granola is homemade and packed with nuts, coconut, and a touch of honey, but a good store-bought granola works well too.

Mix a cup of granola with two to three tablespoons of peanut butter until evenly combined. The peanut butter adds creaminess, protein, and healthy fats. Stuff the mixture into cored apples, arrange them in a baking dish with a little hot water in the bottom, and bake until the apples are tender and the granola is chewy inside and crisp on top.

Baked Stuffed Apples with Peanut Butter Granola

Ingredients

  • 4 baking apples (such as Fuji, Golden Delicious, Jonagold, Braeburn, McIntosh, or Rome Beauty)
  • 1 cup granola
  • 2 to 3 tablespoons peanut butter (creamy or crunchy)
  • 1 cup hot water

Instructions

  • Preheat oven to 350°F.
  • Core each apple, removing the stem and seeds while leaving about 1/2 inch at the bottom so the filling won’t fall through. Aim for a hole just under 1 inch wide.
  • In a medium bowl, combine the granola with 2 to 3 tablespoons peanut butter, using the back of a spoon to mix until evenly incorporated. Adjust peanut butter to taste.
  • Place the apples in an 8-inch square baking dish. Carefully pour 1 cup hot water into the bottom of the dish, cover with foil, and bake 30 minutes. Remove foil and bake an additional 20–25 minutes, or until apples are tender and the skin begins to wrinkle. Test doneness by inserting a sharp knife where the granola meets the apple—there should be little resistance. If apples need more time, cover again with foil to prevent the granola from over-browning.
