I first made this for a church Christmas breakfast and it was a hit. I liked it so much I baked it again to photograph and share the recipe. Of all the casseroles on the table that morning, this one disappeared first—always a good sign.

We often serve it for “brinner” (breakfast for dinner). I had to hurry with the photos because dusk came quickly, but the dish still photographed well and tasted even better.

This baked omelet is built in layers: a base of cheese and green chiles, a layer of diced ham, then an egg-and-milk mixture poured over, finished with the remaining cheese and a sprinkle of parsley for color.

Ham Chile and Cheese Baked Omelet

Ingredients

  • 2 ½ cups shredded cheddar, divided
  • 8 oz diced green chiles, (two 4oz cans)
  • 16 oz pkg diced ham
  • 8 large eggs
  • 12 oz can fat free evaporated milk, (or any milk you have)
  • Salt and Pepper to taste, I used about ¾ tsp salt and ½ tsp pepper; adjust for the salt in the ham and cheese
  • Dried Parsley, for garnish

Instructions

 

  • Preheat oven and grease a 9×13-inch baking dish with cooking spray.
  • Mix 2 cups of the shredded cheddar with the diced green chiles and spread this mixture evenly across the bottom of the prepared dish.
  • Scatter the diced ham over the chile-and-cheese layer.
  • Whisk the eggs with the evaporated milk (or regular milk) and season with salt and pepper. Pour the egg mixture evenly over the layers in the dish.
  • Sprinkle the remaining ½ cup of shredded cheddar over the top and add a light dusting of dried parsley for color.
  • Cover with foil and bake at 375°F for 60 minutes. Remove the foil for the last 15 minutes to allow the top to brown. The omelet is done when the center is bubbling and the filling feels set and firm when pressed.
