Last summer I went a little wild with no-churn ice creams, sharing Oreo Fudge, Chocolate Peanut Butter Cup and Cake Batter versions. Now I’m back with another favorite: a two-ingredient Coconut Ice Cream that’s unbelievably creamy and simple to make. We’ve already planned multiple batches because it’s that good.

I made this batch for a recipe I’ll share later this week, but it’s delightful straight from the freezer on its own: smooth, rich and very coconut-forward. If you don’t love shredded coconut, don’t worry — the pictured coconut garnish is optional and the ice cream itself contains only minimal coconut bits from the cream of coconut.

The recipe uses just heavy whipping cream and cream of coconut. If you haven’t tried cream of coconut before, it’s a sweetened, thick coconut product commonly used in tropical drinks and desserts. It’s not the same as coconut milk or coconut cream, so be sure to look for cream of coconut in the mixers aisle; brands like Coco Lopez, Coco Goya or Coco Real are typical choices. The product is non-alcoholic and very sweet, making it a perfect base for this simple ice cream.

No Churn Coconut Ice Cream

Yields16 (1/2-cup) servings

Ingredients

  • 1 pint
    heavy whipping cream
  • 15 oz
    can cream of coconut (not coconut milk or coconut cream)

Instructions

  • In the bowl of a stand mixer fitted with the whisk attachment, whip the heavy cream on high until stiff peaks form, about 3½ minutes.
  • Gently fold the cream of coconut into the whipped cream until evenly combined.
  • Transfer the mixture to a 2-quart, freezer-safe container and smooth the top.
  • Freeze for at least 6 hours or until firm; overnight is best. Store covered in the freezer.

Notes

  • Cream of coconut is sweetened and thicker than coconut milk or coconut cream; it’s often sold in the mixers aisle and commonly used for piña coladas. Look for brands like Coco Lopez, Coco Goya or Coco Real.
