Grilled Summer Vegetables and Sausage Skewers for Backyard BBQ

Here’s a super-delicious, easy summer dinner that won’t heat up your house: grilled vegetables and sausage cooked in a foil packet on the grill. It’s simple, flavorful, and perfect for warm evenings.

I love this recipe because many of the ingredients can come straight from the garden. It’s light but satisfying — a healthier option that still fills you up and keeps things fresh for summer.

All you need are fresh garden vegetables, sliced.

Some lean turkey Polska kielbasa, sliced into rounds.

Spray the foil lightly, layer the vegetables and sausage, then season well with your favorite grill seasoning.

Fold the packet lengthwise, then widthwise, flip it onto another sheet of foil and repeat to seal. Grill about 4–5 minutes per side. Done!

This method works great for camping too. Pre-cut your vegetables and store them in containers, then assemble the foil packets at the site and cook them in the coals. We served ours with Garlic Parmesan Orzo and loved the combination.

Easy Grilled Summer Vegetables & Sausage

Ingredients

  • 1 yellow squash
  • 1 zucchini
  • 1 small red onion
  • 1 green pepper
  • 1 red pepper
  • 13 oz Turkey Polska Kielbasa (or other favorite summer sausage)
  • Weber N’Orleans Cajun or other favorite seasoning

Instructions

 

  • Slice all vegetables to a similar thickness; a mandoline makes this quick and even.
  • Slice the sausage into rounds.
  • Lightly spray a piece of foil. Add the vegetables and sausage, then season generously with your favorite grill seasoning.
  • Fold the foil lengthwise (hot dog style), then widthwise (hamburger style) to form a secure packet. Flip the packet onto another sheet of foil and repeat the folds to ensure it stays sealed.
  • Grill over medium-high heat for about 4–5 minutes per side (two sides). Open the packet, taste, and adjust seasonings if needed. Serve with a side like Garlic Parmesan Orzo if desired.
  • For a light char on the vegetables, carefully open the packet near the end of cooking, close the grill lid, and let them brown for a few minutes.
