Kansas City BBQ Rub Recipe: Sweet and Smoky Seasoning Blend

My husband and I were experimenting with steak and wanted a homemade dry rub instead of our usual store-bought seasoning. This Kansas City–style rub turned out bold and flavorful — we didn’t need any steak sauce. My husband kept saying it had been a long time since he enjoyed a steak that didn’t require sauce.

The blend is sweet and sassy, balancing the heat of cayenne with the caramel notes of brown sugar. If you’re grilling this summer, this rub is an easy way to boost flavor and caramelize a beautiful crust on steaks or ribs.

Ingredients

  • 2 Tbsp brown sugar
  • 1 Tbsp paprika
  • ¾ tsp black pepper
  • ¾ tsp salt
  • ¾ tsp chili powder
  • ¾ tsp garlic powder
  • ¾ tsp onion powder
  • ¾ tsp cayenne powder
  • ¾ tsp dry mustard

Instructions

  • Combine all ingredients in a food processor or spice grinder and blend until evenly mixed.
  • Generously rub the mixture onto steaks or ribs and grill to your desired doneness, allowing the sugar to caramelize for a flavorful crust.
  • Store any unused, uncontaminated rub in an airtight container in a cool, dry place.

  • Yield: approximately ½ cup of rub—enough for several steaks or a rack of ribs.
