To save time I used pre-cooked real bacon pieces, which are handy in baked dishes, salads, and scrambled eggs as well. I also added fresh green onions—there’s nothing like using herbs and produce from your own garden when they’re available.

Bacon Cheddar Biscuits

Ingredients

  • 2 cups (240 g) all-purpose flour, (stir, spoon & level)
  • 2 Tbsp granulated sugar
  • 1 Tbsp baking powder
  • 1 tsp salt
  • ⅓ cup (63 g) shortening
  • ¾ cup (63 g) shredded cheddar cheese
  • ¼ cup (28 g) real bacon bits (about 4 slices cooked and chopped)
  • ¼ cup (18 g) green onion or chives, sliced
  • ¾ cup (177 ml) milk

Instructions

 

  • Preheat the oven to 450°F (230°C). In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  • Cut in the shortening with a pastry blender or two knives until the mixture resembles coarse peas.
  • Fold in the shredded cheddar, bacon bits, and sliced green onion or chives until evenly distributed.
  • Pour in the milk and stir just until the dough comes together and all the dry flour is moistened.
  • Turn the dough onto a lightly floured surface. Knead gently four times, then pat into a disk about ¾-inch thick. Flour a biscuit cutter and cut biscuits, placing them on a prepared baking sheet lined with a silicone mat or sprayed with pan spray. Press scraps together gently—do not overwork—and continue cutting until all dough is used. This yields about 8 biscuits.
  • Bake at 450°F (230°C) for 10–12 minutes, or until the edges are golden brown. Remove and cool briefly on a rack before serving.
