One of my New Year’s resolutions was to share recipes I’ve been holding onto — and this microwave chocolate chip cookie is one I finally decided to publish. I tested and adjusted it to get the texture and flavor I like, then wrote it down and, admittedly, let the note sit in a drawer for too long. I dug it out and made it again so I could share the final version with you.

The ingredients are essentially the same as a traditional cookie dough, except this single-serve version doesn’t require baking soda. The egg yolk provides the lift needed when cooking in the microwave.

You mix everything directly in a microwave-safe dish such as a ramekin or a mug, then microwave until it reaches your preferred doneness. I’ve found that a flat ramekin cooks more evenly than a tall mug, so I recommend using a 4-inch / 8-ounce ramekin if you have one.

If you often crave dessert but don’t want to bake a whole batch of cookies and overindulge, this single-serve cookie is a great solution. It satisfies your sweet tooth while keeping portions reasonable. Enjoy without the guilt of making too many.

UPDATED 1/28/17: An eggless version was added after testing. The texture differs from the egg version, but it still tastes like a chocolate chip cookie. Enjoy!
