Choose any baked 9-inch crust you prefer. A store-bought graham cracker or pre-made refrigerated crust works great, or use your favorite homemade blind-baked crust. For a twist, try a golden Oreo crust for extra flavor and color contrast.

Ingredients

  • 8 oz (226 g) block-style cream cheese
  • 14 oz (396 g) can sweetened condensed milk
  • 6 oz (177 ml) frozen pink lemonade concentrate (half a can), thawed
  • 2 to 3 drops red or pink food coloring (optional)
  • 4 oz (113 g) light whipped topping (Cool Whip) (½ of an 8 oz tub)
  • 9-inch pie crust, baked (graham, cookie, or pastry)
  • lemons for garnish (optional)

Instructions

 

  • In a large bowl, beat the cream cheese with an electric mixer on medium-high until light and fluffy. Gradually add the sweetened condensed milk and the thawed pink lemonade concentrate, mixing until smooth. Add 2–3 drops of red or pink food coloring if you want a deeper pink color.
  • Gently fold in the whipped topping until evenly incorporated. Spoon or pour the mixture into the prepared, cooled pie crust and smooth the top.
  • Freeze the pie for at least 6 hours or overnight for best results. When ready to serve, slice immediately and garnish with lemon slices if desired.

Notes

Use half a 12 oz can (6 oz) of frozen pink lemonade concentrate, thawed. For a firmer pie, freeze overnight. Store leftovers tightly covered in the freezer and allow a few minutes at room temperature before serving to make slicing easier.
