Honey Whole-Wheat Pizza Crust Recipe for Soft, Crispy Bases

I recently discovered WinCo, and I’ve become obsessed with their bulk foods section. Don’t laugh—this store is fantastic. We only moved near one about four months ago, which explains why I hadn’t shopped there sooner. The first time my family went, we spent nearly an hour and a half browsing the bulk bins. I decided to try whole wheat flour for the first time at home, bought a small amount from the bulk section, and adapted my favorite easy pizza crust recipe into a healthier whole wheat version.

Until now I had never baked with whole wheat flour. My husband normally dislikes wheat bread—though I always buy it, so he eats it anyway—but he absolutely loved this pizza crust. I loved it too. The crust has great flavor, and a touch of honey gives it just the right hint of sweetness.

Because I’m excited about our homemade pizza, here’s a little secret for my pizza sauce: mix two parts tomato sauce with one part BBQ sauce. It might sound unusual, but it’s delicious—especially with a Kansas City–style BBQ sauce like Bullseye. The BBQ sauce adds a pleasant sweetness that pairs beautifully with pepperoni. Honey Whole Wheat Pizza Crust

Ingredients

  • ¾ cup (177 ml) warm water
  • ½ Tbsp instant yeast
  • 1 Tbsp honey
  • ½ Tbsp extra virgin olive oil
  • ½ tsp salt
  • 1 ½ cups (228 g) whole wheat flour

Instructions

 

  • In a bowl, dissolve the yeast and honey in the warm water. Let the mixture rest about 5 minutes, until it becomes bubbly.
  • Add the extra virgin olive oil, salt, and whole wheat bread flour. Stir vigorously with a spoon—about 50 good stirs—until the dough comes together and no longer sticks to the bowl. If needed, sprinkle additional whole wheat flour to reduce stickiness. Remove the dough, lightly grease the inside of the bowl with cooking spray, return the dough to the bowl, cover with a towel, and let it rise for 30 minutes.
  • Grease a pizza pan with cooking spray, turn the dough out onto the pan, and dust the top with more whole wheat flour. Roll the dough into a 12–14″ circle about ¼” thick.
  • Pre-bake the crust at 425°F for 3 minutes to allow it to puff slightly. Remove from the oven, spread your sauce, add cheese and toppings, then return to the oven and bake for 11–12 minutes until the cheese is melted and the crust is golden.
