
My husband and I used to order this style of burger at one of our favorite college restaurants. We were always drawn to the fresh mozzarella and the flavored mayo — a garlicky basil aioli. After moving away from that college town, we still crave this combination on occasion, so I recreated our favorite version at home.

This homemade version turned out delicious — not an exact copy of the restaurant burger, but a tasty and satisfying alternative. We grill a lot in summer and usually stick to the same seasoning, so this recipe makes a great variation. The garlic basil aioli is especially good; its bright basil and lemon notes elevate the burger. If you love fresh basil and creamy cheese, add this to your summer grilling list.


Italian Caprese Burger with Garlic Basil Aioli

Ingredients
Beef Patties
- 1 lb lean ground beef
- ¾ Tbsp Italian seasoning
- ¾ Tbsp Montreal steak seasoning
- 2 tsp fresh basil, chopped (Gourmet Garden paste works well)
- 1 tsp minced garlic
Garlic Basil Aioli
- ½ cup light mayonnaise
- 2 Tbsp fresh basil, chopped (or paste)
- 2 tsp lemon juice
- 1 tsp minced garlic
Extras
- 8 oz fresh mozzarella, sliced
- 1 Roma tomato, sliced
- 4 hamburger buns
Instructions

Combine the ground beef with Italian seasoning, Montreal steak seasoning, chopped basil, and minced garlic. Divide into four portions and shape into patties — a burger press works well for uniform patties.

Whisk together the mayonnaise, basil, lemon juice, and garlic in a small bowl. Refrigerate while you cook the burgers so the flavors meld.

Preheat the grill and cook the patties 3–4 minutes per side, or until they reach your preferred doneness. During the last minute on the grill, top each patty with slices of fresh mozzarella so it softens and begins to melt.

Assemble the burgers on toasted buns with a couple slices of tomato and a generous dollop or squirt of garlic basil aioli. Serve immediately.
