Ingredients
Chicken Teriyaki:
- 3 large chicken breasts
- 1 tsp minced garlic (about 2 cloves)
- ½ cup finely chopped onion
- ½ cup honey
- ½ cup low sodium soy sauce
- ¼ cup rice vinegar
- 1 Tbsp minced ginger (or ginger paste)
- ⅛ tsp ground black pepper
Cornstarch Slurry:
- 2 Tbsp cornstarch
- 2 Tbsp cold water

Place the chicken breasts in the bottom of a slow cooker. Combine the garlic, chopped onion, honey, soy sauce, rice vinegar, ginger, and black pepper; pour the mixture over the chicken. Cook on low for 4–6 hours, until the chicken is tender and easily shredded.

Remove the chicken and shred it with two forks. Pour the cooking liquid into a saucepan and bring to a gentle boil. In a small bowl, whisk together the cornstarch and cold water to make a slurry.

Slowly whisk the cornstarch slurry into the boiling sauce until it thickens. You may not need all the slurry, or you may need a little more, depending on how much liquid the chicken released.

Pour the thickened teriyaki sauce over the shredded chicken and toss to coat. Serve over brown rice and garnish with sliced green onions and sesame seeds.
