Citrus-Grilled Malibu Chicken with Pineapple Salsa

One of my favorite healthy meals from a past health challenge is this Grilled Malibu Chicken. Think of it as an inside-out Chicken Cordon Bleu without breadcrumbs and with sweet pineapple for a bright twist.

The combination of sweet pineapple, savory ham, melty cheese, and tender grilled chicken is what makes this dish so satisfying. The chicken needs only salt and pepper for seasoning, though Jamaican jerk seasoning works well if you prefer bolder flavors. It’s a quick, tasty option for a weekend grill night.

Grilled Malibu Chicken

Ingredients

  • 4 (4oz) boneless skinless chicken breasts
  • 16 slices Healthy Ones Black Forest Ham
  • 4 slices Provolone or Swiss Cheese
  • 8 pineapple rings
  • Salt and Pepper

Instructions

  • Preheat grill to medium. Grill each pineapple ring until grill marks appear on both sides, then move rings to the upper rack or a warm spot to keep them heated.
  • Season both sides of each chicken breast with salt and pepper.
  • Grill the chicken 3 to 4 minutes per side, or until the internal temperature reaches 160°F (to allow for carryover cooking).
  • Top each grilled breast with 4 slices of ham, a slice of provolone or Swiss, and 2 grilled pineapple rings.
  • Close the grill lid for about 2 minutes to melt the cheese. Ensure the chicken reaches 165°F, then remove from the grill and serve.
